    You may not be the biggest channel on YT but the thing that speaks volumes about your craft and as a person is I can't recall any videos having a dislike. In a time when so many throw up clickbait and sellout it's refreshing to see you and yours stand firm in your traditions methods and beliefs.

    I bought my wife a cast iron skillet while vacationing in San Antonio. I told her she should cook some omellets for breakfast, she promptly replied "it's not possible, it'll stick". I showed her your skillet seasoning video, and this video, and she just cooked her first iron skillet omellet this morning. Your videos are awesome, you got my sub. Greetings from Mexico.

      @@Pontiac65Cat, my sympathies to you. I lost my Mama in February of 2016 and my Pappy about 14 years earlier and the loss STILL hurts!! 😭😟
      But I have my Mama to thank for teaching me how to cook, sew and clean when I was just a young pup.
      She told me and my brothers that we all need to know the basics to take care of ourselves until we could find us a GOOD Woman so we could then take GOOD care of HER! LOL
      So I darned sure learned how to cook and lo and behold! I got stuck with doing a LARGE percentage of the cooking for my folks and 5 brothers. At least THEY had to clear the table and wash the dishes. Hahaha.
      But I'd do it ALL over again to have my Mama and my Papa back.

    My Dad was an omelette enthusiast. You could even have called him and omelette nut. That and pancakes he loved to make and eat. I think weekends were dedicated to those two breakfasts. I used to put milk in my eggs like he did until I grew up and started making my own. I don't remember how I came to put water in the eggs, might have been a happy mistake the first time, but I noticed how fluffy the eggs got and I never stopped doing it.

    I worked as a fry cook part time in High School (1959), and the old chef that taught me everything taught me to put just a splash of whole milk or cream in with 2 eggs just like you put in the water to scramble them. I still do this today, good video, keep up the good work, I enjoy every one of them

    I really love my cast iron skillet! Picked it up at a Thrift Store, almost brand new...under $10.00! What a beauty of a pan! Can use it for stove top and oven....just love it! Looking forward to at least 2 more and a dutch oven! Blessings to you!

    Recent subscriber, I really enjoy your videos Cowboy Kent.
    My granny taught me how to season and take care of a cast iron skillet when I was 10 years old. She used the "grease" (bacon drippings) she kept on the stove in an old coffee can.
    In 50 years of cooking I've owned every kind of cookware. To this day a cast iron skillet sits right on top of my stove. No point in putting it in the cupboard; it is used at every meal!

    Start an omlette with all the goodies (onion, sausage, peppers, etc.) When browned - Add/mix in 1-2 T of heavy whipping cream for 2 eggs and pour over the goodies. You will have a smooth, light, custardy omlette

    Cast iron makes the best omlettes I've ever had. Once our wedding present "non stick" pans were worn out after a few years, we decided to go 100% cast iron on our skillets and we love cooking in them and how easy they are to care for. Couple of our new Lodge pans were sticking with that rough finish though, but we tried the sanding technique you had a video on and now they work perfectly. Our large skillet is already smooth, but the smaller ones were rough. Thanks for the tips. Made our cast iron even better.

    Wow! Just tried this on my cast iron, BEST omlette I've ever made in my life! I think you might be right, Cowboy Kent, the water does make a difference, my eggs came out fluffy. I used fat I rendered from bacon, rather than butter. Thanks again!

    Went out and bought my first cast iron skillet today. Spent 3 hours sanding and polishing the rough down. Bottom and sides smooth as glass now. Then seasoned like Cowboy Kent said. Can't wait to make some corn bread

    i love my 8 inch cast iron it makes the perfect size omelette thanks to your seasoning and gettin rid of the rough preseason tips i can now fry eggs without a worry of sticking . and your right i raise free range chickens wont find a better tasting egg

    Kent,
    You and I are of a single mind on how to generate a skillet omelette, we only differ on the skillet. The Lodge Combo Cooker has both my ideal egg skillet in the low rounded side skillet but the attendant high side gives the possibility of both biscuits and stew. Can’t beat it. Love your vid’s, keep ‘em coming.

    Great & simple video. Only comment is cook on medium to medium low depending on your stove heat output (ours is gas). Note- I was only good at omelettes but now I’m borderline great. Ready to teach my 10 year old (supervised) now with confidence.

    Over the years we've had a number of 'omelette' skillets, a French copper one (handle rivet finally tore out), a Le Crueset enameled cast iron one (stuff always stuck to it), a cheesy no-stick one, and the latest, a Japanese Iwachu (it's a beautiful skillet). But watching this video made me think of my great grandma's 8" Griswold hanging on the pegboard in the kitchen. I use it all the time to fry eggs, tomatoes (red) and such, so I don't know why I'd never tried it for an omelette. It works great!

    I completely agree...the only difference is I use heavy cream instead of the water and after adding the fix’ns I wait a moment then flip it over again to the other side. If you’ve been treating your cast iron pans right nothing sticks. After I plate the omelette I give the skillet a quick rinse and brush...then I throw it back on the still warm burner to dry nicely.
    I’ll give the water a try...if I like it, it save me some money?

    I use lil milk instead of water to make them fluffy,instead of butter to grease the skillet,I use Pam spray,no fat.also they don't stick glide right into your plate.

    Mmmmm mm m! Love omelets! Especially out of cast iron. I'm a collector as a hobby of cast iron. Hope I never have to move! Ha! I only use cast iron to cook with. Cast iron is more than just a pot or pan it has history and if you don't treat it right you won't use it long . Nothing worse than food stuck to a pan every time you use it. Kent if you buy unseasoned new cast iron and you need to season it for the first time I highly recommend the Crisco 500 method .you can type it in your computer .the Crisco 500 method.

    I just received your book for Christmas and it by far is my favorite cookbook. I was wondering if you could do a video of a good setup for dutch oven cooking for those of us that cook mostly in our backyard. I am still using charcoal for convenience, but need to make the switch someday. Thank you. Keep the videos coming.

    That's our morning routine...2 8-inchers; one started as a new Lodge, and one a garage sale rescued Wagner cost me 50 cents and some elbow grease. I like to fry the diced ham and/or bacon in the butter, then pour in egg/water. Salsa & cheese inside; fold and top with (more) salsa & cheese, and serve with toasted homemade sourdough bread. Add cowboy coffee from a blue-enameled percolator and you're off to a great start. I can go 4-5 hours working before I'm hungry again. Kent got me into cast-iron cooking, and with his restoration & seasoning, all our pans are like glass on the cooking surface. Fancy "non-stick pans" have been relegated to plinking targets.

    Thank you so much for the free guide. I have a short memory and this guide is great. Straight to the point and stated plainly. One question I do have, is when the cast iron goes in the oven after each layer of seasoning, is it turned upside down or right side up? I know you said right side up in a previous video.     A little bit of flap jack batter will make omelettes extra fluffy like a cloud in west Texas sky.
