GAJAR KA HALWA / GAJRELA
Gajerela
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4
Ingredients
For Pressure Cook
1 tbsp Ghee, घी
1 liter Milk, दूध
2 kg Winter Carrots, grated, गाजर
¼ tsp Saffron Strands
1 cup Sugar, चीनी
Toasted Nuts, भुने हुए मेवे
For Tossing Nuts
½ tbsp Ghee, घी
9-10 no. Almonds, chopped, बादाम
9-10 no. Cashew nuts, काजू
For Garnish
6-7 no. Pistachios, blanched & silver, , पिसता
Silver vrak, चांदी का वर्ख
Process
For Pressure Cook
Peel and cut the carrots in halves. Then grate the carrots and keep aside in a bowl.
Grease the bottom of the pressure cooker with some Ghee and pour milk into it. Heat the milk thoroughly.
Once the milk is heated, add grated carrots into it and mix well.
Close the lid and cook it till 1 cooker whistle.
Transfer it in a kadhai and reduce the mixture for 15 minutes.
Add Saffron Strands and Sugar once the mixture is completely reduced and cook it well.
Add toasted nuts into the mixture and mix well.
Garnish with sliced pistachios and silver foil.
Serve hot.
For Toasted Nuts
Finely chop almonds and cashew nuts. Keep aside for further use.
In a pan, add some Ghee and heat it well. Once the Ghee is heated, add chopped almonds and cashew nuts into it.
Saute the nuts and keep aside for further use.

I have grown up seeing my mom make this and never knew she was actually making Gajrela.. I always though the halwa and Gajrela was the same… so glad you cleared that up! Making this tomorrow chef!

Being a chef is not just a talent but an emotion and it feels ki kitne bhi recipes try kr le but apne mummy, dadi, nani ki recipes will always be the best. Emotions attached hota na. I remember my mom used to lightly fry the grated carrots in ghee and then cover it for 10-15 minutes in low to medium flame, before adding milk to it and then following the same process as Sir, you did. Usse kya hota hai, mujhe aaj bhi nhi pata. But I remember this being the sacred secret, she wouldn't share with anyone, except me. And now when I make it, people around find it commendable and phir mujhse iski recipe maangte. But now it is my secret 😁😁 But agar sach bolun toh it feels ki recipe se zyada hum kis pyaar aur nazakat se khane ko banate hai, woh ise zyada flavour deti hai.

I am Kashmiri and in our house gajerela was cooked as kheer and had rice in it. May be in punjabi household rice aren't added. I liked your comment about making Gajar halwa with orange gazar but you can't find red gajar in Turkey or other parts of Europe so we have no option but to cook halwa with orange gajar.
