Agree with you on Not using a fine grinding plate. I use 1/4" holes for brats, and 3/8" holes for Potato sausage, smaller holes turn the meat in to mush. I like the idea of adding fennel, crushed red pepper& wine to chicken sausage for a Italian flavor.
