      Sounds good, but I would chop it very very small. Pastina is such a small pasta. You don’t want to have big pieces of chicken and small tiny pasta, unless you like that! Thanks again!

      Hi, if you go to my channel, to the video section, there’s a full video on Caprice sausage. It’s primarily just my standard Italian sausage with tomato basil and mozzarella cheese. But the video is very definitive if you’d like to make it. Thanks for your questions!

    this looks soo good and I will try it. The interesting thing that I have observed with Sunday Gravy recipes is that most of the ingredients are the same but the order that things are added are different. I don't know how much influence that has on the outcome but it's all delicious. The one thing that I like to do is add cheese rind (parmesan/romano) into the sauce to add more flavor as well.

      ​@@godfatherbbqitalian The first time I made my own sauce I thought "This is good. I was expecting more but this is good.". I didn't quite get it. Then I went and got a store bought jar sauce and as soon as I had it I went "Uppp, now I get it. The stuff I made is superior to store bought. No matter how 'high' quality.". I won't go back to store bought (meh, maybe if I'm making French bread pizza). And grinding up your own cheese makes a difference as well. This is a good lesson on quality over convenience and putting in a little effort. Plus the kids like to join in.

    I've done your Sunday gravy Italian American style twice.... It's fun to make can't wait to try this version. In the 80s I was in the Army stationed two years in northern Italy and want to find REAL authentic Italian recipes... The story of your grandparents certifies this as what I'm looking for😄👍

    You put the salt in the water when it is bowling because if you put it in when the water is cold it can dammage you pot. Salt does not disolve in cold water !!

    Made this for the second time tonight, came out incredible, better than my first try. I throw mild or sweet Italian sausage for a protein after it’s done before adding the cheese. 👌🏻 your recipes are incredible sir

    Just finished my 1st attempt at this in a large electric skillet, a couple of things. I started with too much olive oil in the beginning and overall too much salt and pepper! The next time will be much better...

    After my father passed, my mother was kind of left hanging. She had to work longer hours and more days to make ends meet. As such, we had this recipe for dinner fairly often. It wasn't always peppers. Sometimes it was asparagus, squash, etc. Later, after my mom learned to cope with the missing income, things got better. When I say better, I mean we ate what we had available to us. There was a period of time when I didn't know what was on the table. So many times I looked at dinner and had to ask what it was; breast of lamb, stuffed squid, rabbit...whatever she got her hands on, that's what we had for dinner. As difficult as it was without dad around, it taught me and my sister both what perseverance and strength really were, and how to appreciate the things we would acquire later in life...

    Another great video. You made this sauce very close to the way I make it. Two differences: One, I fry my meatballs first. But, I do know people that don't, so I'm going to give that a try. Second, I don't add canned sauce. I've never done that, but because your family did it that way (my family was from Sicily), I'm going to try it. And, yes, I've heard the same thing about the way Hunts peels their tomatoes. I think they kinda flash steam them or something, which is a superior way to peel the tomato. I don't know for sure, but I think it's something like that...

    I make my balls the same way, but I use Locatelli Pecorino Romano for cheese and milk for moisture. Water has no flavor, so I use milk. My family, however, doesn't use any moisture or only water if it needs it. Being up north, they have access to great Italian bread, which they purchase nearly daily. Whatever is leftover, they dry and make bread crumbs...

    Sorry about your mom. It's very painful watching a great family with great memories leaving us as time moves on. My Grandfather and Grandmother are gone. I've lost two Aunts and one Uncle. Two cousins are gone. My mother is hanging in at 94, but doesn't remember things well. The neighborhood my Grandparents lived and where we spent every Sunday and every Holiday has gone to hell. I wish it could be like it was, but life just keeps moving ahead without slowing down...

    Looks great! I'll give it a try. I have salted cod in the fridge. The fried and baked cod I have down pretty well, but I also have dried cod hanging on my wall that I need to learn how to cook. My family called it Fisso Stocca, which to my ears always sounded like they were saying vicious stock. I never figured out exactly how they made it, but it went something like tomato, potato, olives, capers, and maybe onion. I wish I knew for sure because it was awesome and no one on the Internet makes it the way my Mother and Grandmother did. For those reasons, it's always an experiment when I make it...

    My entire family immigrated from Sicily back in the day. I was first one born in the United States. Among many things, I watched my amazing Grandmother prepare sausage. She worked in a place that made purses. My Grandfather, also an amazing person, took care of the trees, bushes, and flowers in the city parks. Together, they raised seven kids; three sons and four daughters. They could not afford conveniences, so no grinder for her. She hand cut a huge pile of pork on the kitchen table, seasoned it, then pushed it all into skins using her thumbs and a small metal funnel. It was refreshing to see a video on the Internet that presented authentic Italian sausage. Salt, pepper, fennel, wine. My Grandfather grew the fennel in the yard and made his own wine in barrels in the basement that he and my Uncles dug out by hand with shovels. This was a great video...

      ​@@godfatherbbqitalian They wound up on the North side of Syracuse. It was awesome as a kid. My mother would take me for walks (she loved the city) and we would stop in the Italian bread bakery where the bread was so hot we could barely hold onto it. I always went for the "little loaves" and ate the whole thing with no butter, nothing. We would walk by the Italian deli where the cheese and the meat was hanging from the ceiling and piles of dried sausages (my favorite) stacked on the deli counter. We walked past houses with porches where the old Italian women with their aprons on and their nylon stockings rolled down around their ankles would be sitting, smiling, and waving at us saying 'Allo.' So many great memories...

    If you want to tame the acidity from tomatoes all they have to do is add add carrot just cut the ends peel it let it cook in the sauce and then remove it you can only also do that with making spaghetti sauce marinara sauce old school trick just remember to pull it out after everything's c o m e together and simmered

      Yes, that’s always an option, but I only do it if I’m running short on time. Time will always tame the acidity in tomatoes. Unless they are fresh and not ripe.
