I'm a Chef of 30 years and vegan to boot, looks nice and congrats , but why the excessive over complicating ingredients for a wow factor, it's like a defense mechanism , you have a fantastic carrot , leave it alone , break it down into it's own textures etc. In high end restaurants , sure we use liquid nitrogen etc, but we are leaving the ingredient alone . Just an opinion is all , over doing it for events and videos make no sense , show case the ingredient , not what new exciting thing has come along > again just my humble opnion , it happens in the non Vegan world as well , not singling anyone out.
