If you want to be a vegan/vegetarian, one cuisine one must definitely master is Indian cuisine! The abundance of spices available, the art of Indian cooking is incredible with the tsunami of flavours is a vegetarian paradise!

As a meat eater, I love vegetarian food. But I loathe vegan food. I've been to Michelin restos and have had vegetarian tasting menus that blew my mind, and better than many non-vegetarian ones. Vegan food just pushes the boundary of restrictions too far. No dairy kills all the potential - butter, cheese, cream, etc - they elevate flavours. I've been to so many highly rated vegan restaurants and they all disappoint. It's basically all sauce driven dishes made with seeds or avocado, and a mushrooms seemingly in every course. Or simply add curry to everything. It's just not satisfying. Give me a good vegetarian pizza instead with real cheese!
There are vegan alternatives to dairy food. Just try going to a health food store and see the many varieties of cheese, milk, cream,etc. I started making my own milk from nuts with natural sweetener, tastes better than any cow milk I've ever had.
@@Delightfulcritics I only drink cashew milk, which I find is almost the exact same as dairy milk. However, I've tried many vegan cheeses, and all of them still inherently taste of nuts and nothing like real cheese. Cheese and cream as ingredients in a meal just can't be replaced I found.

You assume I hold a particular "view" or agenda in some sort of disdainful way. That is simply false and shows your restricted view of tolerating people who have differing opinions than you. There's no reason to be judgmental of someone for having differing opinions. My opinion isn't due to lack of experience. In fact, I'm always up for trying a new vegan cheese or meals, and continue to do so since I originally wrote my comment 2 years ago. Unfortunately, I haven't yet come across a truly great vegan pizza or fettucine alfredo, because as I stated, vegan cheese or creams just don't cut it for my taste and palette. Maybe it does for yours. And THAT'S OKAY. So long as you keep trying new things, and judge people and new experiences fairly, you're not being restrictive. Try being more open minded and less restrictive (narrow minded) in your mindset.

I always find it weird how meat eaters come to bash highly regarded and inspirational vegan restaurants.... Does it make you feel insecure that vegan food can also achieve such elevated flavor profiles and satisfaction? Don't worry your archaic mindset has passed its prime... Time will tell. No offence, but you can't be fancy without fish egg caviar, fine wine, and mushroom stroganoff, fancy people have to like certain things, period! And as much as it hurts your selective beliefs in food, you can't be fancy and a vegan, you can only be fancy and a pesco-vegan, that's the limit to vegetarianism as regards good taste.
