I havent tested this myself, but I think you can just create a curve and set it as the target object for the vertex weight proximity modifier. Put the curve above the grass as he did with the empty, then animate the vertices of the curve going down in the shape of your desired path to create the same effect since its based on proximity.

You need Vertices as origins for the Hair Modifier. If you add a Plane it has only the 4 Corner Vertices. You need to Subdivide and apply the scale.
