    The Mediterranean diet is famous worldwide so in this new recipe video discover how to make a garlic aioli in more of a traditional way, romesco and skordalia (from Greece).

    AIOLI RECIPE
    Ingredients
    * 1 egg yolk
    * 4 crushed or minced garlic cloves
    * 200ml / 7 oz of olive oil (or other if you're using blender etc)
    * 1-2 teaspoons lemon juice (more to taste at the end)
    * Pinch of saffron (optional)
    * Salt to taste
    Instructions
    Add the lemon juice, saffron, whole garlic and a light pinch of salt, to the bowl of your mortar and pestle. Grind it into a paste.
    Then add the egg yolk, mix all that together and start to stream in your olive oil.
    Mix until emulsified and add a splash of water or lemon juice if it’s too thick.
    ROMESCO RECIPE
    Ingredients
    * 2 large ripe tomatoes
    * 2 x ñora dried peppers / 2 x ancho chillies / 2 tsp sweet paprika
    * 1 large onion
    * 4 garlic cloves
    * 75g. of peeled almonds
    * 50g of hazelnuts
    * 50g of walnuts
    * 2 slices of bread (left out to dry)
    * 75 ml extra virgin olive oil
    * 20ml sherry vinegar
    * Salt to taste
    Instructions
    Place the ñoras or ancho chillies (or other dried) in a bowl with hot water so that they rehydrate, and leave them for about 30 minutes, until they are fully hydrated.
    Quarter the onions and pierce the skin of the tomatoes a little to prevent them from bursting. Then place them both on a tray or in an ovenproof dish with the garlic. Bake, at 180º C, for 30 minutes, until everything is roasted.
    While the vegetables are cooking, remove the dried chillies from the water and take the seeds out. With the tip of a knife or a teaspoon.
    Roast the hazelnuts, almonds and walnuts on a tray, keeping them in separate sections. If possible, remove the skin from the hazelnuts by rubbing them in a cloth.
    Once the tomatoes, onions and garlic have had their 30 minutes of cooking, remove the skins from them all.
    Into a blender add the rehydrated chilli, the hazelnuts, the walnuts and the almonds, the bread ripped into smaller pieces, tomatoes, onion and roasted garlic, a pinch of salt, the sherry vinegar and a little of the oil.
    Add the chopped bread, tomatoes, onion and chopped garlic cloves. Add a pinch of salt, the sherry vinegar and part of the oil.
    Blend whilst streaming in the rest of the oil until you have a creamy texture and appearance.
    SKORDALIA RECIPE
    Ingredients
    * 500g potatoes, peeled and cut into evenly sized pieces
    * 3/4 teaspoon salt
    * 3 cloves of garlic
    * 120ml olive oil
    * 30ml white wine vinegar
    * Salt
    * Pepper
    * 2 spring onion tops, finely sliced
    * Small handful of parsley, finely chopped
    Instructions
    Peel the potatoes and cut them into evenly sized pieces.
    Place them into a pot filled with salted water onto a high heat, bring to a boil then simmer.
    In a food processor, add the olive oil, garlic, white wine vinegar, salt and pepper.
    Blend until the garlic is completely smooth
    When your potatoes are ready, and you can easily pierce them with a knife, drain and set aside for 5 minutes, to allow all of the steam to evaporate.
    After 5 minutes, mash them with a potato masher. (Il like to leave some bits of potato for texture)
    Add the garlic-oil and stir to incorporate, and season with salt and pepper.
    Allow to cool for 10 minutes then mix in the sliced spring onions (green onions/scallions), chopped parsley and more olive oil if needed.
