Amazing content mate! The pic you used to show the formula sitting position is from the Elemental RP1! I laminated all of the carbon parts (all the car basically) of first units back from 2015 to 2017 when I was just starting as a composite technician in Portugal (the parts were later assembled in the UK)! I never expected to see that again in my life!
Especially for endurance races, streching, fitness & your seating position will actually make you more consistent and reduce fatigue and is a much too less talked about thing. I've yet to see a single post on r/simracing "Here are 5 streching exercises". To raise the height I used 3 M5 shims for the brake and ca. 20 for the throttle pedal of the Heusinkveld Sprints. Plus I mounted some leftover 80x40 alu profile as a heel rest in place of clutch.
sorry but saying that the wheel should be pointing to my shoulders and my elbows should be around 90 degree bent doesn't help much without saying at what height the wheel base should be... there are a billion positions that get that result, including the one where the wheel base sits between my legs.

What causes knee pain, after doing a 1 hour race I experience knee pain in my left knee from braking.
Have you tried adjusting your leg alignment to the brake pedal? Ideally they should be perfectly in line with each other.

Well that's going to vary based on the rig being used, the wheel base, the seat and the height / arm span of the individual.
