I have the same slow cooker but I cook mine for 10 hrs during the night, and then left on warm until I wake up. I find it best to cook large shanks for longer to get that fall off the bone. I did them for 8 hours first time and the meat didn’t fall off the bone. Very tasty recipe.

From an ex-chef: my oven- a bog-standard gas oven with grill- has a slow-cook setting. If yours doesn't, Gas Mark 1 will be your best bet, but you might need to reduce the cooking time; checking the doneness, and liquid level, after 3 hours is a good idea. Also, best to start it off on a high heat to get it going, then reduce the temperature once it's bubbling.

I do mine in a dutch oven,,same veg arrangement, cept for the bay leaf,,cant see the point,,,and the thyme,,,dried thyme is a disaster,,,always use the real thing. I have a little secret for having real thyme all year round. Creamy mash is a good choice if I dont throw the spuds in with the shanks. I use a good dollop of blackcurrant jam and I use chicken stock cos lamb stock is as rare as chickens teeth in this ugly little smelly secret tax haven green snot country on the edge of Europe. If its a mash choice,,I serve the mash on a bed of the same jam,,I learned this in Tbilisi, Georgia. I dont add sugar for this reason and under no circumstances,,,tomato puree. I think we are on the same page here. Again,,your hair is so lush,,,and that dress will never do you wrong

Redcurrant Jelly is exactly that a sieved jelly, however Cranberry Sauce is more textured because it’s not sieved. Hope this helps. 🥘
As much as love lamb and especially lamb shanks there almost impossible to buy shanks in my part of the UK either fresh or frozen
Have you tried a local butcher, that’s where l get mine from along with all of my meat 🍽️
