- These stuffed peppers were amazing!! Definitely add the pinto beans! These are also really easy to make any night of the week!
Here's what you need:
3 Chorizo Sausages casing removed
1lb ground chicken
1 can of pinto beans drained and rinsed
4oz of tomato sauce
1 medium onion diced
2-3 cloves minced
half a bunch of cilantro chopped
Mixed bell peppers cut in half
8-16oz of Oaxaca Cheese or any cheese you like
1 packet of Vigo Cilantro Lime Rice
For the Sauce:
1/4 a cup of Mexican Creme or Sour Cream
1/2 a cup of Herdez Taqueria Cilantro Lime Street Sauce
Put into a squirt bottle and shake well
Here's what to do:
-Start by cooking the rice per instructions
-Season the ground chicken with salt, pepper, roasted garlic powder, paprika, and cumin
-Remove the casing from the chorizo and break them apart
-Then dice the onion, mince the garlic, and cut the peppers
-Grate the cheese
-Rinse the pinto beans
-Heat a skillet over medium heat with some oil like avocado oil
-Put the beans into a medium pot and add the tomato sauce and simmer
-Cook the onions until slightly browned
-Add the chicken and chorizo and garlic and mix well
-Then get the rice, meat, and beans into a large bowl and mix well
-Then stuff all the peppers with meat and rice mixture and top with the shredded Oaxaca Cheese
-put stuffed peppers into the oven and set at a low broil until cheese is melted and golden in color
Now just top with the cilantro and the Cilantro Lime Crema sauce and enjoy!
