Can just the Grill Grates be used regularly in the smoker? I also like that the Grill Grates can be flipped over for more of a griddle type surface, and the holes allow smoke and extra heat to pass through.

Let’s get a link of where we can buy it! Can I install the Searmate with the regular grates beside it to sear and do a regular cook on the other grates?

You could. There's room for 1 grate on the 30.

On a 30”, can you fit just one of these in? (Like Ryan demonstrated), or can it fit 2? Also, if the grill is set to 300, what temp does this get to? (600?). I remember another video where Ryan said to crank it up to 400 with just the heatwaves attached. Are there any benefits to just getting the heatwaves and not the searmate?
