Hello, if you rather prefer road trips to see castles instead of hiking, I would recommend two routes that you can easily do from Kaiserslautern at the weekend:
One route is along the Rhine river to the city Koblenz. From Kaiserslautern, you just drive north to Bad Kreuznach and enter the 'Rhine-Romantic Route' in Lorch on the Rhine. From there, you just drive further north along the right side of the Rhine (maybe doing some phot stops at some of the castles), then visit the town of Koblenz, take the cable car to the scenic viewpoint etc. and then return from Koblenz on the left side of the Rhine. Here is a recent video of young German-American couple, visiting Koblenz (and the cable car), which may give you an impression:

And here is a website with impressions of the route:

Another tour would go east. The famous "Burgenstrasse" (engl.: Castle Road) starts in Mannheim and features countless castles and palaces up to Bayreuth in Bavaria. (you wont be able to do this in one day, though - that's something only Asian tourists do when they come to Europe, riding their busses... ;-) )
There is also a website for this (of course in English) to give you some impressions:
    www.burgenstrasse.de/uk/Home.html
There are also special offers for children:

ArmAd Spengler hello friend! Yes hiking may be a little too much on the little legs right now. (We go on walks and they start hurting, I blame growth pains) But these definitely sound fun to explore! Thank you always for the tips and resources!

@@journeywiththedrawns8468 I see - yeah, its no use if the kids don't have fun when there is a somewhat longer hike.
Although some of the hiking routes are on well maintained paths where you can also use a stroller...
Young parents in Germany also use a baby carrier when they go hiking with their kids - but of course thats up to you.
And an alternative is a road trip with some stops to have short walks.
