    Do you eat the skin or do you peel that off before eating? Also, how do you store in the fridge and how long will it keep once done?

    Thank you. If I don't have the pork skin, can I wrap the meat in cheesecloth? In the past I made prosciutto wrapped with cheesecloth, will it also work with Bresaola?

    What is the skin/wrapping that you are using? How much did the meat weigh?

      The skin is in foil. It's a natural pork skin. I got it from Italy. Soon it will available on our website. The weight was 1kg. Ciao

    bellissimo video volevo solo sapere se posso lasciare la bresaola in frigo per 2 mesi o non va bene?

      Ciao, si la puoi lasciare in frigo,l importante è che la giri ogni settimana. La bresaola del video lo tenuta 2 mesi in frigo, ed era eccezionale. Se hai problemi fammi sapere. Ciao
