If you want to speed up the process even further, if you are able to purchase a Major Hook Time Booster from Eijnar, your catch time will be reduced greatly. If you don't want to keep buying them, you can throw your line, open your inventory and unequip the Booster, and it will not lose durability. Then just equip it again before the next throw, rinse and repeat. Also, standing close to other fishermen will reduca catch time, so you should do this as well.

I have also noticed that sometimes casting in a starred pool with glow worm that trying to reel it in, the fish "gets away" but my line stays in the water -- Thinking I lost my chance at the star fish, I would reel back in and move on.. Until yesterday when I got so upset that I just let my cast stay in while I composed myself and ANOTHER fish jumped on. Shocked, I reeled it in and it was STILL a starred fish!! So if this happens to you, just know that you have a second chance at the star right now (unless they change it in the future!)

How do I let go of the fish? If I don't reel in, the fish just sits there and I have to force it off by making the rod health decline. I feel like I'm missing something... fyi, I am playing on the switch.
Looked this up on my Switch recently and if you accidentally get a fish hooked, you will need to reel them in. This is why it is important to pay attention to the shadow of the fish as each shadow is unique

I think for me it was spending tons of time fishing where you beging to recognize their respective shadows
