    Well done, it's BEAUTIFUL! I've always liked Neapolitan ice cream with favorite memories of it being the only ice cream my grandparents and great grandparents served. I look forward to surprising & unveiling this cake at one of our family gatherings.
    You taught me so many elements in this one video: crumb coating, how to properly use bench scrapers & cake combs, how to make drips without actually flooding your cake, how chilling your cake can control American buttercream frosting behavior (and ganache & choc.), and finally, how to stack & wiggle/slide layers into place vs. trying to tackle it in one movement & praying it's right & doesn't break. For many years I assisted my mother with wedding cakes, as in eating annoying cake tops, and carrying them to their destination (with the threat of death if we messed it up), lol. One thing my mom insisted on was everyone clearing out of the kitchen when she got into the details... so we never did this together. However, you've taught me enough to up my (pretty good) novice game, and surprise her with an awesome cake! 🎂 This means SO MUCH to me, so I thank you for sharing for the posterity of cake craft. ❤❤❤
    A quick couple questions: at what point do you put supports into your larger layers to prevent the cake from collapsing? Is there a trick/hint you use to signal you need to? Is there an industry weight suggestion? Also, if you're using supports, does it ruin fun filling effects like ganaches and candies?
