Hi Jennifer and sweet family! Yum, chicken soup base is such a delicious time saver. I just canned ham and bean soup yesterday, trying to get ready for winter and power outages.
The kids did great fishing, congratulations! What a fun time together.
I hope everyone has a very blessed weekend!

I'm interested in your ham and bean soup recipe. Do you make your soup fully and then pressure can it or do you have a recipe where you pile all the ingredients in the jar and can. If you can let me know I'd appreciate that.

    • @WillowsGarden
      @WillowsGarden 2 місяці тому +1

@@acountrylife I use the quick soak method for my beans and they are not mushy. I sort and wash them. For ham and bean soup I use Great Northern Beans or Navy Beans, but you can use any bean you like.
      Quick Soak Method For Beans:
      1# beans sorted and washed
Put into pot and cover with water 2 inches
      Bring to boil
      Boil for 2 minutes
When done boiling turn heat off and cover with lid- let sit for 1 hour
After beans sit for 1 hour, dump into strainer and rinse beans.
Rinse pan beans where in and pick out any floaters or split in half
Now beans are ready to be canned
      Veggies I used:
2 medium onions chopped or minced
      3 celery stalks chopped small
3 carrots chopped or if you like larger pieces circles
I add all the vegetables in a bowl and mix them up well.
I cube my ham up and I use about 2 ham steaks worth like you buy in the store. A leftover ham or ham bone is great for this recipe. I pick any meat off my ham bone and trim away the fat.
I line up my 7 quart jars that I have washed and I add about:
1 cup to 1 1/2 cups of quick soaked beans per jar or till it’s almost 1/3 full of beans
      1/2-1 cup of cubed ham
      1 cup of mixed vegetables
You can use chicken stock or water to cover the beans, ham and vegetables.
You can make a chicken stock and add the seasonings or you can add the seasonings per jar whichever you prefer.
If you make the chicken stock in a pot you can add the seasoning to your liking, but by the jar is just quicker for me.
      Seasonings per jar:
      1/2 bay leaf
      1 fresh sprig thyme
      1/2 teaspoon onion powder
      1/2 teaspoon garlic powder
      1/2 teaspoon paprika
      1 teaspoon chicken bouillon
      1/8 teaspoon black pepper
Add boiling water to 1 inch headspace
      Debubble jars
      Wipe rims
      Put lids on jars
Put bands on jars fingertip tight
Put jars into hot pressure canner
Process for 75 minutes for quarts
      60 minutes for pints
I used Jeni Gough’s broth and seasoning recipe, it’s so good. It’s a flavorful broth and it’s not hard to make. I like to prepare my vegetables and meat the day before I can and do my beans the next morning when I plan on canning my soup. It just makes it easier on me to chop everything the day before and store them in the refrigerator and take them out the next day 1 hour before I get ready to use.
Hope this helps fill your pantry. ❤️

It’s not advised to leave your jars sitting in the canner for that long after they are finished processing. You risk getting flat sour and ruining all your work.

You really shouldn’t leave the food in the canner for hours after the process has completed, it’s a process that has been tested for a reason, safety and not wasting something you took your time preparing, several things can go wrong better to make sure you have the time to complete the canning session. I’m saying this as someone who made the same mistake and ended up throwing out an expensive canner load of food, after talking with a master canner and being advised never to leave it in the canner past the time stated in the recipe. I mean this in the nicest way as people watch and will think it’s okay to do this because they trust you know what you are doing, I’m thinking you might have flat sour as you said it didn’t smell right.

@@MNTNSTARZ80. the music was inserted, but the voice/talking during that section is talking about freeze dried corn, and squash puree, which didn’t seem to make sense with what she was doing. • @annamaria8755

    • @marykoufalis7666
      @marykoufalis7666 2 місяці тому +6

Please understand that no UA-cam channel creator has control over where the ads end up in their video or if any ads will end up in their video. The minute a UA-cam channel becomes monetized then UA-cam just inserts ads anywhere it feels like it. The only thing Jennifer has control over is the paid promotion that she talks about in her actual video. And that is why it is obligatory for every creator to mention at the top of their video that they will have a promotional product for the viewer to choose to skip it or not. But again, please remember she does not control the ads that pop up in between her videos. It's very random and I can tell you that I have rarely ever received ads, skippable or otherwise, during her videos.

      EDIT: @ sueojeda7277.
Nope. I didn't hear anything to make me think there was some inside joke, so you must be serious. Some of the city people moving out here from San Francisco and Oakland don't understand that you can go fishing and catch your own dinner fresh instead of going to a store to buy something someone else caught yesterday. Maybe your experience is similar? Trying to understand your comment.
So my original question to you stands: Why would catch and release except when size says that they should? I'll finish watching the rest of the video to make sure I understand why you would ask the question. If I'm wrong I'll delete.
