- Caciocavallo Ubriaco literally means “drunk cheese”. It’s a type of semi-hard cheese that is soaked in Primitivo wine for 30 days. Caciocavallo is a very popular cheese in southern Italy, but soaking it in wine completely changes its taste and texture and gives a truly unique cheese. I visited Masserie Amodio in Mottola, Puglia, Italy, to see how this beauty comes to life.

In Macedonia and Serbia, plus a few other balkan countries, all hard and semi-hard yellow cheeses are called kashkaval, from caciocavallo.They're distinguished by milk type, cow kashkaval, sheep kashkaval etc.
Wow, it's amazing how countries are connected through food. I'd like to try one of these cheeses one day!

I love the rustic nature of these traditional craft products. In America, you'd never see something like this sold unless it was made under bright lamps, stainless steel tables and white sterile tile floors.
Really? I thought California was pretty well known for its wines and there are many other states that give pretty "rustic vibes" (i mean in a good way, I'm not trying to offend) it's surprising that by your saying there are no food products similar to this one in America
They definitely exist, my fiancé works for a meat and oil company that’s close to 100 years old. they’re methods haven’t changed much and the original family still owns it. Lmao they even relay on humans to sort through the bad corn it’s just old ladies sitting around with their corn bags.

Cavallo to Han gin pairs and to mean horse is probably because on a horse you could hang it over the horse and have it hang on both sides
"The first possibility is that caciocavallo inherited this name as it originally spread in the Kingdom of Naples. In this area, a branding depicting a horse was impressed on the cheese produced. Furthermore, in the same historical period and always in the Kingdom of Naples, these cheeses were worked in piggyback style. The Neapolitan track is further supported by the fact that the saying "fare la fine del caciocavallo" that is to say "be hanged" is in frequent use. The second possible explanation instead refers to a specific practice that is used for the production of caciocavallo which consists in hanging the cheese wheels two by two in a "horse" shape from an auction. A third similar thesis can be that according to which the caciocavallo wheels were transported by nomads during their travels and were left to dry in pairs on one side and on the other of the horse's rump."
