I am irrationally angry that they did not test the pH of the cheddar and gruyere after that long preamble about the perfect pH. First, prove they are in the melting zone, THEN demonstrate with the damn pizzas.

Technically, you were never promised an explanation about WHY you always did. By the way, did you always not use mozarella ? Obviously using mozarella instead of gruyere is the right way to melt gruyere.

It does matter.
You don't cook alot but shredded mozzarella cheese does not melt at all.
Its important to use the right ingredients for cooking.
Explains why I couldnt melt cheese a few days ago. Too alkaline.

It was less about HOW you've been melting cheese
and more about WHAT cheese you've been melting.
Here in Australia, Light Cheddar cheese makes a good substitute for Mozzarella. Not as stringy as the Mozzarella but it doesn't go oily light full fat cheddar.
And it's better choice for pizza than fresh mozzarella. Mozzarella is to moist. So it will most likely make your dough soggy. I'm only using it for authentic Neapolitan pizza and its real tricky to do it right. So they missed point in video. Yes, mozzarella have best melting and stretching but there is many better options for pizza. Best way to use mozzarella is cut in slices, heat it up just little bit, put olive oil on it and that's. If you mixing mozzarella with strong tastes you will not feel gentle structure of it.
Sorry, but the cheddar oil pools looks much better to me than anything. Who wouldn't want cheddar oil?!
What I'm curious about is why, when put on a hot surface, cheese can first melt, then solidify again. That must be some kind of chemical reaction, but it piques my interest. Say you make a grilled cheese sandwich and the cheese leaks out, then it touches the hot surface and it starts going solid again, albeit browned. There's of course not just 1 type of component to cheese, but it's so unnatural, since after all a solid metls, then turns to gas. Not melt, back to solid. So I'm curious what happens there.

Science isn’t that simple for example frozen carbon dioxide is solid but doesn’t melt, it changes directly to a gas (process of sublimation) 🧐

Mozzarella isn't kneaded like pizza dough. I've watched loads of mozzarella making videos and that doesn't happen. It gets heated in very hot water and stretched a bit. But it's not kneaded like dough.

The pizza demo would be much better using a real, wood fired pizza oven. Generally domestic ovens aren’t hot enough to get the best results.

The cheese on pizza does not have to string. It's silly. It's better to just get a good cheese onto a pizza - go for flavour and forget trying to make it string. It's actually messy and annoying when cheese strings.
