What is the advantage of doing the toe that way over just starting at the tip of the toe? There is a reason, correct? I just watched your video on the tubular 2x2. Very good. Is it flexible enough to work for socks top down?
A short row toe will match a short row heel when you use a yarn that is self striping. Similarly a center start toe will match an afterthought heel (make a bullseye design). Some will prefer doing shortrows to doing increases. Some will prefer the look of shortrows to the look of increases. Shortrows are done flat while starting at the center of the toe will be done in the round. Some may prefer that.
If you are using short row toe shaping for a toe-up sock, because of the construction, it's not possible to start at the tip of the toe. You pretty much have to use some sort of provisional cast on to start things off.
