I love rotisserie chickens. I break them apart. Rough chop the meat and divide it up, put in freezer bags, lay them flat and freeze. That way if I want to make soup or a casserole I can pull out a bag and throw it together. Easy peasy!!!
I roast off a family pack of chicken breast [15 min in an air fryer oven, flipping partway through) and then I do that. It is great to have already cooked chicken to just toss into dishes. I get 4 to 5 bags, depending on the weight of the pack. Cheaper since I'm not paying for bone weight.

These all looked delicious! I made bacon cheeseburger soup yesterday for the first time, and it was so good. I see so many people make it, but it was my first time trying it. i didn't follow a recipe. I just threw it together, and it was soo good. Beef stew will be ne t for sure. Ive never thought to put dumplings in beef stew. that's brilliant! I always eat beef stew with some sort of biscuit or bread, so putting dumplings in it makes so much sense! I can't wait to try it. I'll be eating bacon cheeseburger soup for the next few days, but after that, it's def beef stew with dumplings 🤤

Ever think about adding a can of beans to the Chicken Nacho soup? I think that'd be really good. Also, I made a different recipe (my own take) on potato soup today so that was funny when it popped up lol (I don't like bacon in potato soup. So mine is not loaded potato soup. I like bacon, just not with potato soup. Kind of weird, I know. Mine also had some different ingredients such as celery, onion, minced garlic, salt, pepper, and cayenne. And I use parm and sour cream with the cheddar. I also use veggie broth instead of chicken).

I go through a stalk quickly, since I use it in most of my dishes. I love celery in homemade chili with a lot of onion and garlic. I will be putting celery and carrots into all of these soups. My mom always cooked with it and I do too.
These all looked so yummy. I had forgotten all about potato soup, so that is going on my list for sure. Celery is a veggie that I don't really keep in my house either. Here is a tip: If your store has a salad bar, get the celery from there. The small amount you need for a recipe doesn't weigh alot so the cost is small. Thanks for sharing!

I am a senior and live alone. I buy a chuck roast and halve it, maybe about 1 lb each after cutting, I take one half and cut it into cubes. That beef stew dumpling soup looks great. I like the baked potato soup too. No milk in it.

Hey Brooke and family! ❤ Perfect timing it's getting cooler weather here in Ga. I love making soups in this kind of weather and stocking up the freezer. I can't wait to make these. I like to go to my sam's club and buy 3-4 rotisserie chickens bring them hime and debone them divide the chicken up,freeze it flat(and I have it when I need it)then i like to make homemade stock with the bones and veggie scraps that I've saved up in the freezer I can some and put some in freezer too. Saves on buying it from store. Your family is so precious. ❤Nancy
Hey Brooke! You should try the canned diced potatoes instead of the frozen ones, I use them in soup and chicken pot pies. They hold their texture and don’t fall apart and it is a huge time saver! One can is all you need for chicken pot pie
I’ve tried it before, and it’s pretty good! I normally don’t use the frozen, but I got a good member discount on them at Ingles lol it was $2 for that bag. I tried stretching it as far as I could lol!

Im freezing already even though winter isn't even officially here yet. Ol Mother Nature is confused again...I am NOT cut out for this anymore 🥶. It's snowy, a little icy, & getting down to 16 again tonight with wind chills near zero (& getting colder as the week goes on...p.s. send some sunshine PLEASE).
Seeing your beef stew and dumplings reminds me of when COVID hit. I was in anew relationship with my hubby! We were at his house and he had one weeks worth of food in the house (I’m more of a prepper and he is now). Anyway I took two steak and potato soups he had on the shelf, added water and dropped dumplings in it for a satisfying dinner. The stores here rapidly established delivery and our church delivered one meal a week so we were soon fine.
My husband and I don’t eat celery either. But some soups just need it. I found frozen mirepoix mix at Kroger. I keep some on hand in our freezer now. So nice to have it for soups.
That looks so good. Making small rivels would be cheaper and just about as easy as opening those cans of biscuits. I hate it when they pop 😂. I always put rivels on my potato soup too

Oh yes! I always get at least 2 meals out of one rotisserie chicken. Most of the time I get 3! Which is a steal! $5.98 divided by 3 meals! It’s unheard of now days to get chicken that cheap lol

Potato soup is my favorite. When I make it my niece likes it with ground chuck, I cook the ground chuck separate. We like it with cornbread.
