Best advice I can give you is record it. Get an action camera before you get the bike so you can go back and see how far you've progressed. 750 is a perfect first bike. Most power than a 600 but not as heavy and bulky as a 1000. Good luck on your riding journey! Let me know what you decide to get.
I just got a gsxr 750 k6 a few months ago, I took half the day for work to go to the DMV to put it on the road then took it to work and first ride was on the highway it was the best thing
