The Best Split Pea Soup and How to Raw Pack Can it

  • My process for canning split pea soup. Recipe below. not sure if this is an approved USDA canning method. been doing it for years, no problems. I do not presoak or blanch any of the ingredients. All go in as a raw pack would, excluding the ham which was baked beforehand. I want to say a huge thank you to Rev. Vincent (Vinnie) Nicoletti and his darling wife, Cathy who have been a part of our family for many a year as we were in ministry together in Detroit Michigan some years back at the Metropolitan World Outreach Center in Southwest Detroit.
    They graciously blessed us with many bags of beans and other legumes and I am in heaven processing them for use in our home. Their home church will be linked below if you live near them and would like to support their ministry to those in need. The food bank that they keep going reaches so many and helps to make the lives of those they reach more enriched in both body and soul. If you are in need or even on the edge of being in need and require any help, these folks are kind and helpful. We’ve all been in tough spots before and a helping hand is always a blessing!
    ALWAYS MAKE SURE THAT YOUR HANDS ARE WASHED thoroughly!
    Add the recommended amount of water for your pressure canner. If you don’t know what that is, there are many places online where you can find the manuals for your particular canner. If your jars are new, wash in hot soapy water and rinse, if they are being reused, and you are pressure canning as in this a case a run through the dishwasher is fine. Lids should be washed in hot soapy water but really don’t need to be sterilized in boiling water when pressure canning. Most county extension programs and universities that test this sort of things have amended their recommendations in the last few years to include this. I wouldn’t use them straight out of the box because you never know where the cardboard boxes were stored before you bought them. They could have mouse or rat urine or a myriad of other things that can get into or be spilled on the box.
    Because everything that is in the jar is cold except for the hot water that I add, I do not have the canner on heat. When I am almost done filling the jars, I turn the heat on medium and let the water in the canner start warming up to meet the temp of the jars.
    RECIPE:
    for pints
    1/4 to 1/3 cup picked and rinsed dried split peas
    chopped onion, celery, Ham and carrots, and your choice of
    stock, broth or water to one inch headspace
    process in a pressure canner for 75 minutes using lbs of pressure recommended for your altitude

    Ma! Thank you for posting these videos! As long as UA-cam is around my kids and grandkids and I can go and watch a learn some of the cultural things we’ve forgotten or didn’t know.       @@jaquiebean8669 ….I agree, this looks like the best recipe for pea and ham soup that I’ve seen. Everyone else cooks the peas for about an hour before canning 😱 in the uk we use marrowfat peas soaked overnight in boiling water with a teaspoon or bicarbonate of soda, rinse the peas and cook for about 25 minutes.
      I’m thinking if everything is uncooked like this recipe says before canning it’s got to taste good and not be mushy.

    Great recipe, my mother used the exact same ingredients to make her pea soup apart from the peas.
    I’m from the uk and we don’t use split peas to make this soup we use marrowfat peas, I’ve been looking for a raw pack recipe for pea soup as most canners cook the peas first and I think that wouldn’t be to my taste as I like to have my soup chunky.

    Okay, first, my house needs your kitchen. ;) Anyway, with the FDA approved recipe warning, it doesn't mean the FDA tested it and killed off half the staff in the process. It more often means they either haven't done the testing yet and don't want a law suit or, is more often the usual case, they've done the research and lost the data. Either way, as you said, everyone needs to do their own research, etc. My grandmother (God rest her soul) and my mother (God rest her soul too) fed large families on home canned food. Nobody got sick or died, so hey... can't argue with success, right? As for pea soup, there's no way to ruin it unless someone adds allspice to it. (Nope... not here.) Also, if anyone has been blessed with a bounty of food, it's best to be thankful and make use of the goods. I love watching a master at work, and, yes, I'll be replenishing my pea soup supply, and the FDA will just have to deal with it. Stay blessed!

    I tried this recipe and my peas on the bottom look really dark. I don’t know if they burnt a little but I hope they still taste good. Any suggestions to prevent that?

    thank you so much for this video. i am planning on making several jars of split pea soup. it is one of my favs. Can navy beans be done this way also?

      Yes! Navy beans can be done the same way 1/2 cup per pint, then add hot water and 75 min processing time. Navy beans are wonderful with ham but I would make it a scant 1/2 cup of beans or even a bit less if you want more liquid. And as with the split pea soup, it may come out a bit thick but just add a tidge of water when reheating. 😊 Happy canning!

      This is exactly how I make navy bean and ham soup. It turns out great! I add seasonings I like (oregano, thyme, etc.) and top with ham stock or another stock if trying to cut down on salt. The ham stock is pretty salty.
