Ragi Idli is a healthy and nutritious South Indian dish made using ragi (finger millet) and urad dal. Ragi is a rich source of calcium, iron, and dietary fiber, making this idli a great option for a wholesome breakfast or snack. Here’s a Ragi Idli recipe using whole ragi (finger millet) along with urad dal, rice, and fenugreek seeds. This version is highly nutritious and retains the full benefits of whole ragi.
Ingredients:
1 cup whole ragi (finger millet)
1/2 cup urad dal (split and skinned black gram)
1 cup idli rice or parboiled rice
1/2 teaspoon fenugreek seeds
Salt to taste
Water as needed
Oil for greasing idli molds
Instructions:
Soak whole ragi, urad dal and fenugreek seeds, rice in water for 8-10 hours or overnight.
Soak poha 10 mins before grinding the batter.
Drain the water from the soaked mixture.
Grind the everything together into a smooth batter using water as needed.
Mix the ground ragi-rice batter and urad dal batter in a large bowl.
Add salt and mix well.
Cover the batter and allow it to ferment overnight or for 8-10 hours in a warm place until it rises and becomes airy.
After fermentation, gently stir the batter. If it's too thick, add a little water to adjust the consistency.
Grease the idli molds with oil and pour the batter into each mold, filling them about 3/4th full.
Steam the idlis in an idli steamer or pressure cooker (without the whistle) for 12-15 minutes, until cooked through.
Serve the ragi idlis hot with sambar and chutney.
