This is the best sweet bread dough recipe that I have ever tried, and I have kept it in my memo, I believe it will also go well with other fillings, such as custard! Can you make mash the bean paste with a blender. I just did that and it was finely blended. I'm not sure if it's supposed to have chunks of beans in them
Amazing recipe! every time came out good! made it again last night i did some changes, 1/2 tsp yeast enough,did all the step except the second proof i put it in the fridge overnight take out to proof in the morning and bake. I made 11 buns and different fillings sasame paste, red beans and feta cheese which my daughter had this for breakfast,thanks again!

You can't beat homemade anpan, especially if you make your own anko! I always wondered how the sesame seeds sit so perfectly on top of the anpan. Thanks for sharing the secret!

If your dough gets too buttery or too overwhelming you can refrigerate it or freeze it for at least thirty minutes to create a less oily seeming dough. I don't know how it might affect the dough for this recipe but this tip has worked for past recipes of mine.

Put into cubes and roll in? I heard from French reader that this recipe is exactly like how they make rolls. I think Japanese learned this technique from European, as it's pretty common method in Japan (it's not my method). :)
I made these today (following your recipe and with freshly-made, chunky-style anko) and they turned out extremely well. I'll definitely be making them again... and often... If anyone else is considering making this, it's a *very* good recipe and the vid is easy to follow along with. There's really not *that* much work involved (way more time waiting for proofing than kneading), so give it a try!

Update: made the recipe again with my leftover bean paste and I changed some things from my first iteration that made it come out better. 1: used my stand mixer to get the dough to initially come together. Helps a lot! 2: don’t add excess flour. The dough eventually becomes less sticky, and that’s what I think made my last batch come out poorer. I’m not an expert dough maker, but that seemed to help a lot. Thanks again for the recipe!

What is the consistency of the custard like? Pudding or like icing?
