Homemade Yogurt with Instant Pot | Goat Milk

  • We love Greek yogurt in the morning for breakfast (or anytime as a snack)! We were so excited to try making homemade yogurt once we started milking our sweet Nigerian Dwarf does. We found a recipe using the Instant Pot and now we're making Greek yogurt a couple times a week. It's super simple and you can make it with any good quality milk - it doesn't have to be farm fresh.     I made this and it was delicious; thank you Lance and Marci! I had to seal my Instant Pot, for some reason it doesn't make yogurt when venting. Now I'm a big fan of both yogurt and goat kefir. Yours is the only recipe/demonstration that has worked for me.

    I have never had much luck with making yogurt with our goat milk. You inspire me to try again.

    I use the whey to bake bread. So delicious, sub it for an equal amount of water. If you don't have enough, just add water.

      @@RockingCHomestead I personally just use yogurt whey because that's all I have but I bet you can use any whey. Good question.

    I haven't done this with goat milk yet, but I've made several batches of yogurt with whole milk, and I've let it drain until it was the consistency of cream cheese. I love making it because it's so much cheaper, and saltless (the store-bought stuff is salted). A hint for you, though: I bring my milk up to 180 on the saute button with the lid off. Admittedly, you have to stand there and stir it to keep it from burning to the bottom of the pan, but so far, that hasn't been an issue. I am SO looking forward to making goat yogurt!

    Thank you. I have been looking for instruction for the instpot. We strain some of the yogurt for 24 hrs and it makes a type of yogurt cheese called labneh, we mix in herbs=delicious.

      @@RockingCHomestead .. I’m in SE Oklahoma. Only goat milk I found was the ultra pasteurized sold in Walmart. Drove to Tulsa yesterday to WholeFoods who told me that they don’t sell no other than the ultra pasteurized goat milk because Oklahoma law won’t allow them to sell raw goat milk. Do you have any suggestions?

    Thanks for the great video! We got Alpine goats last weekend so I have been having lots of fun making new things! This yogurt turned out perfectly. I put away most of it without straining since I will be using it for smoothies.

      Hi,
      it’s thin but yogurty after 20 hours.
      I used coconut yogurt with strawberry.
      My husband does the shopping and couldn’t find goat or sheep yogurt

    Great video thanks! I'm making some now, it's pasteurized goat milk so hopefully it will work until I can visit a farm for raw goats milk

      Did it work out? We have never made it with pasteurized milk, but it should work. Just don't use Ultra Pasteurized.

    Hey! Thank you so much for the easy making video that you made! It is awesome. Unfortunately for me, the result came out liquid... what did I do wrong? I use raw milk (& did all the steps mentioned) & use a grass fed yogurt with probiotic for starter. I have no luck...

    Hi! I have ultra pasteurized goat milk. :-/ I’ll give it a try anyway and hope it works! My Instant Pot ring also got really stinky after a few batches of pot roast. I ended up buying an Instant Pot glass lid and using that instead for yogurt. First time trying it with goat milk though. :)

      Hope it worked out. The glass top sounds like the way to go. I may have to try that.

      Rocking C Homestead My store-bought goat milk did not set and was really runny... the whole thing went right through the yogurt sieve. I ended up heating up my milk to 100F and added a mixture of 1/8 tsp of rennet with 1/8 cup water. Mixed for 30 seconds, turned off IP, and let it sit for 45 minutes. It was a yogurt consistency and so was finally able to put in my yogurt strainer. Yay!! So yes... you’re right. Pasteurized or ultra-pasteurized did not work with goat milk. It’ll only work if you add a thickener. Thanks for your video!!! ❤️

      I sure it would. You could mix in what ever you put in the Yogurt that you buy in the store.

    Just got 1 gallon of goat's milk from a local school's Horticulture class! They have goats and the teacher comes everyday to milk them but has to throw the milk away because there's no students to teach soap making, cheese making or yogurt! So sad but I told him I would take one off his hands :-D Can't wait! It's boiling now in the Instant Pot! QUESTION: How much vanilla (extract, I assume?) would you put in?

    How do I make it higher protein? Like a Greek yoghourt consistency?

      Not sure you can get higher protein, but you can stain it longer for a thinker consistency.

    Have you tried seeding a new batch off the last batch you made, or do you always use the commercial yogurt as a starter?

      We have tried it both ways. The last batch method works just as well as the commercial yogurt.

      Not sure, I do not like frozen goat milk. Parts of It gets kind of crystalized However, I have never tried it.

      I tried it, and I didn't like the taste. The texture was nice though. Will try with fresh next time.

    Do you do anything with the whey? Can you make some ricotta?

      We normally don't do anything with it. You can make ricotta from some whey, not sure from the whey out of yogurt.

      You can make some Egg Nog starter for the holiday season, I have been giving our extra eggs away every week. However, we have 5 broody hens right now, which is helping out with the numbers of eggs. Plus we think we have a snake sneaking a few. Have you tried to some of the long term storage of eggs in lye and water? I have wanted to give that a try, but don't have the nerve.

      Currently we always give eggs to friends / family, but social distancing has reduced how often we see them.
