Sous Vide Everything 🙏🏼 thank you for replying maybe you could help me am trying to cook a fillet tenderloin wagyu a5 japanese steak using sous de vide and its around 1.5inch thick i was thinking 135f for 2hrs for medium rare ? Or cook it at 131f for 2 hrs ? Am new to this and i dont wanna screw up with such expensive steak 😊
Normally in Thailand, we use lime instead of lemon. There’s no olive oil in the sauce at all, we also use the "Bile of a cow" to give a bitterness to the sauce (optional, if you don’t like it, you don’t have to add it, mine prefer not to add it) The reason why the steak was called "Crying Tiger" is because normally the steak is also from chewy cut of the cow. That was how this steak was serve in Thailand, eating it with Thai sticky rice. Even tho, it wasn’t a steak we have often here. มีคนไทยมาดูไหมเอ่ย.....?

Thats what i was thinking. Im at a point where i dont find medium peppers spicy at all. I need something like the carolina reaper or ghost pepper. Things like habeneros and red peppers just dont feel spicy. Now jalapenos..... for the most part no not spicy. But then there is that one that comes out of no where that is actually quite spiccy
Guga, try a sauce named balado. Just 1 tomato, 8 scallions, 3-4 cloves of garlic, some chilis (on your like) and little bit of salt, sugar and oil (usually we use coconut oil) Edit : you can use a little bit of MSG on it before cook it
Why don't guga change the tabasco pepper with bird's eye chili grown in Indonesia. The scoville unit of Bird's eye chili is higher than tabasco pepper. The 2nd sauce will be spicier. Hahahaha

Nice vid, Guga. Crying Tiger is actually the brisket, though. The sauce itself is call "Jaew" or "Nam Jim Jaew" it's universal sauce for grilled meat. People here in Thailand LOVE brisket. I think it's probably the most consumed part of beef here given how popular Crying Tiger is. I love Sous Vide for steak but for rustic dish like Crying Tiger I just marinate the brisket for couple hours to maintain the slight chewiness. Pair that with sticky rice and it's paradise in your mouth.
just made the Nashville sauce, super tasty. You get those little salt and sugar explosions surrounded by umami type flavors. Really good, and easy to make

I've learned that Guga's palette doesn't detect spice until 3.5 seconds afterwards.

Crying tiger refer to the brisket, not the sauce. That's the "Jaew" sauce. Very stable meat sauce for Thai and Laos cuisine.
