The Night's Cavalry boss fights were some of the most intimidating fights in the game when I was a new player. I set out to destroy each of these fights in the cheesiest way possible and they just kept getting weirder.
Elden Ring is an action role-playing game developed by FromSoftware and published by Bandai Namco Entertainment. The game is a collaborative effort between game director Hidetaka Miyazaki and fantasy novelist George R. R. Martin, and is scheduled to be released for Microsoft Windows, PlayStation 4, PlayStation 5, Xbox One, and Xbox Series X/S on February 25, 2022.

Cavalry -- Dude on horseback.
Calvary -- Place where Jesus died.

Two things. The northern most of the Caelid cavalry, the one by the bridge... if you run up the hill, toward away from the bonfire you were spawning at..... not only will the knight poison himself chasing you, hitting/running into the poison clouds from the traps on the ground that are there, but there is also a large chance the knight will simply die. Not sure why, or how, but he has a good chance of keeling over for no good reason. Or at least did, unless it got patched at some point. Second, the duo fight. Run deeper into the snow area, toward the Haligtree, and the snow/fog disappears. Then you can run BACK over to where the caravan and cavalry are, and you wont have the fog.

Didnt know there were so many nights cavalry. Should include the item you get when killing them so we know what they drop! Didnt know about the one in northern liurnia.

The one in northern Caelid i find very good luck on the other side. Just run on the left side of the divider, jump past the little protruding part, the when you get to the broken part, melee attack the bridge to get its attention. Then it'll usually be far enough to cause it to jump towards you. If not, turn around and run back and forth until it does. Watch out for the sweeping attack though as I think it's the only one that can hit you. At worst that trick only takes me like 2-3 tries.
That Bambam stick looks a little bit fragile :D

The branch for the Lenne's Rise NC is also good, he can't reach you at all, I used magic until I ran out of flasks (he likes to dodge so I'd use Night Comet next time) and then arrows. Eventually he got tired and threw himself off the cliff.

The word "cavalry" isn't:
"Cal-vuh-ree"
it's:
"Cav-aul-ree"
... the 'V' comes before the 'L'
It is a very common mispronunciation. Don't feel bad about it.
Bonus! Another one I hear often is "veteran" pronounced as:
"vet-ran"
... that's what happens if an animal doctor was in a race.
"vet-er-in"
... is someone with tenure or experience, especially in the profession of arms.

I noticed a tree near the Northern Caelid bridge. Is it too low to cheese the Night Cavalry?
Forget all this, just pick a decent fucking shield, and stand there blocking every attack and answer whatever you can with a counterattack (the ones you can do after blocking), they have one attack that goes through your guard and even the strongest in the game deal piss damage with it, once their horse is dead you do a finisher while they're on the ground (try to stand diagonally from their heads) and that should do it, dead.
