- Hello, sweet friends and welcome to another fun cook with me video. Today, I have 2 very special guests with me, helping me make this family favorite! I hope you enjoy! // CHEESECAKE RECIPE //
16 oz softened cream cheese
16 oz small curd cottage cheese (I use full fat)
16 oz heavy cream
16 oz sour cream
4 eggs
1 stick melted butter
1 tbsp vanilla (or 2/4 tbsp vanilla and 1/4 tbsp almond)
3 tbsp flour
3 tbsp cornstarch
1 1/2 cups sugar
Crust recipe of your choice
Preheat oven to 350 degrees. Grease 10 inch spring cake pan. Make crust recipe and fill bottom of pan with crust (or skip a crust). Mix cream cheese, cottage cheese, heavy cream, sour cream, melted butter, vanilla and eggs in a blender. Mix flour, cornstarch, and sugar in a separate bowl. Add wet ingredients to dry ingredients in batches until fully combined. Pour into cake pan. Place pan on cookie sheet and bake for 1 - 1 1/2 hours then allow cake to continue to sit in oven for 2 hours. Refrigerate overnight before eating.

Just FYI if you don’t want the cracks you can put just a little bit of water in your baking sheet pan that you put your springform pan in and that will keep it from cracking

I have an awesome cheesecake recipe that calls for 40 oz of Cream Cheese and whipping cream. I've never put cottage cheese in mine. but i suppose there are hundreds of variations of making Cheesecake. It turned out so perfect and is embellished very Christmassy. The placement of rosemary and cranberries and white morsel's make it look like holly. Merry Christmas to you and yours. Great videos!

I was reading a recipe to my mother as she cooked probably 45+ years ago and mispronounced spatula like you did- my mother laughed about that for years. I would bet if I mentioned that to her today at 94 years old she would still remember! Thanks for the chuckle

Tiffany, my late mother in law’s recipe is similar to that one. It too, has no crust. I always make it in a mixer and put all the ingredients in at once. I was told to put the cake into a water bath so it doesn’t split. What size pan did u use? I always found a 9in too small and a 10in too large🤷🏻♀️
agree, a cheesecake is always baked in a water bath.. nice smooth top as a cheesecake always is.
You said to add your sugar into your wet ingredients, but then your daughter measured out 1.5 cups of sugar with the corn starch and flour . So did I miss something?
We forgot to add it to our wet ingredients. It’s fine to do it either way.
