UKI could have used hitch hiker escape to get out if this was a live roll.. very interesting to see the Japanese perspective vs what modern Jiujitsu uses to execute juji gatame.

The principle is shown such that that escape is not possible. The hitch hiker escape requires being able to turn the trapped hand.

What is the difference between this and a stereo typical MMA arm bar?

No difference is the same technique

His right leg would go over his opponents chest, instead of having his foot tucked under it. That variation isn’t exclusively an MMA thing though. It came from BJJ, which came from Judo, which then came from Ju-Jutsu as far as written records go.

@@0u73rh34v3n I feel like when you tuck your foot like that, you very effectively straighten the arm, opponents arm and his back muscle is actually above the ground so the leverage is better

@@morninglory8988 Oh for sure, however, the most common armbar escape is to quickly push the leg off your head with your free hand and start moving your body on top of that leg to create space and angles. This is easier to do if the person doing the armbar has his other foot tucked underneath you instead of on your chest because it's not applying pressure. But again, and to your point, if the person is incredibly quick to finish the armbar from this position, they'll get the tap anyway.
