I typically do it by ear, but what I would recommend is to put an audio file of the song you're remaking into FL Studio and inserting a pattern with a piano or other sound in it on top (make sure the project is the same BPM as the song you're remaking), and then start messing with the notes in the piano roll until you have the identical melody. What may help is to first look up the key of the song you're trying to recreate, as this gives you the notes within which the reference melody was made. So, say, the key of the song you're remaking is C Major, this tells you that you should only be using the notes in the scale of C Major, i.e. C D E F G A B, when remaking the melody. Let me know if this helps!
