its a data issue. all the data for video 24/7 has to be stored somewhere. even if it was iPhone quality the video would be hundreds of gigabytes of storage everyday. just 1 week of video surveillance would be countless terabytes of data.

She could have done this as a 3 man job. One guy to set off a fire, An accomplice to distract. Woman and Guy 1 walk into the dealers. Both take off their coat. Guy 2 sets off a fire on command and triggers the alarm. Woman promptly drops the real diamonds on the floor and rushes out, Forgetting a handbag that’s discreetly hidden inside the room as they sat down. Dealer rushes them both out and goes to close the door, woman realises she “forgot” her handbag and runs in to go get it. She puts the fake diamonds on the table and hides the real ones under her coat. Both rush outside and get into a nearby taxi.

She had 2 identical bags, one was hidden, the other is where she placed the diamonds. She was planning on switching one for the other, maybe claiming to leave the bag there and coming back later to pick it up.
she was going to say she didn't want the items anymore, and leave the duplicate bag of fake diamond with the attendant.
she leaves, gets in her cab that was waiting out front...
by the time the attendant tears into the package and realizes the ol switcheroo, she is long gone.
The problem was her terrible slight of hand in switching the packages... he saw it 100% and knew the real diamond were in a similar package in her bag... so he tried to grab them, then he locked her in the vault

She intended on giving the dealer a false set of the jewellery, while placing the real ones in her briefcase.
Her plan was incredibly stupid, because not only was she giving herself away, but because if you ever want to do a slight of hand tactic you need a distraction and speed. She could have done this as a 3 man job. One guy to set off a fire, An accomplice to distract.
Woman and Guy 1 walk into the dealers. Both take off their coat. Guy 2 sets off a fire on command and triggers the alarm. Woman promptly drops the real diamonds on the floor and rushes out, Forgetting a handbag that’s discreetly hidden inside the room as they sat down.
Dealer rushes them both out and goes to close the door, woman realises she “forgot” her handbag and runs in to go get it. She puts the fake diamonds on the table and hides the real ones under her coat. Both rush outside and get into a nearby taxi.
