Gaggia Ruby Review

  • This is my review of the Gaggia Ruby, the new commercial espresso machine from Gaggia, which is also suitable for #home use due to its more compact size.
    The Ruby is a range of compact commercial espresso machines, which are made for use in coffee shops with limited space.
    The size and cost of these machines make them suitable as home espresso machines, but what interests me in these machines in particular as prosumer machines, is that they're similarly priced to other prosumer machines. But these are actually commercial made, they're not made to be home use machines but made with higher quality components - they are built as commercial machines, but their size and relatively low cost (as far as commercial machines go) make them also suitable as home barista machines.
    These are heat exchanger machines, so you can pull shots, steam milk, and dispense water at the same time on all three models.
    As you'll see, I got on very well with this machine when it comes to pulling shots. One thing I didn't make clear, is that I was dispensing water through the group for a couple of seconds before each shot, to perform a cooling shot, which is usually required on heat exchanger machines to help regulate the temperature.

    But what I didn't get on very well with (this is the first time I've used this machine) was the steam, simply because I'm not used to such a powerful steam delivery. I managed to get pourable texture, but it looks better in the video with the studio lighting than it actually was, it was overstretched, as were all my MANY attempts this day. So I gave up and decided to create another video on using the Ruby to steam milk once I've got the knack for it.

    I’m interested what makes a machine ‘commercial’? I was under the impression that E61 style machines were all sort of prosumer…?

    Hi Kev, thanks for the great content. I have now got a Gaggia Ruby. I use fresh coffee beans, good tampa. I'm getting no crema and just pure watery black. Any ideas? I use on finest setting and have grinded more coarse but no difference. Thanks.

    Great review, really enjoyed it but expensive for home use. Have you thought of reviewing the Breville Barista Max which looks like it could be a great alternative to Bambino for home use at £379.

      Thanks Chris. Yeah, it's not cheap, although it's not the most expensive home Barista machine either. The Breville Barista Max is a machine I should get hold of and review, they're interesting at that price, and on paper looks very similar to the sage Barista express - which is currently £550. Cheers.
