She specifically says at the end of the clip that the imagined scenario was so weird, and that she could swim and while describing that she could swim, she is saying it with a questionable tone, proving it was completely weird, unreal, and imagined.

That scene is another side episode created as a fantasy of Mal’s fear for Uma

Some people said this was her real hair however in behind the scenes and interviews Dove has said she wore wigs in these movies. Also I don’t care if this was her real hair and her hair just magically went from bright purple to platinum blonde again with no fading faze. Also people are saying it’s edited or glued. It was a scene from the books, and in it, Uma was messing with Mal's mind. I'm pretty sure it said she was shocked that she was under the water and how she got there and why she could breathe, and that whole scene after that happened on a boat over the water not under. This was only to make it look cooler.

She can, the only reason she reacted like that to the enchanted lake is because it messed with her magic. It washed of the love spell on Ben so, it messed with her magic. It’s not unbelievable to think that once there was no longer a barrier, keeping her away from the water that she would learn.
