Buttermilk is an alkali liquid formed when making butter, when it is squeezed to remove said liquid. Vinegar is an acid. Due to this, the buttermilk and vinegar react, giving off carbon dioxide, which makes the cake rise.

Red Velvet cake is supposed to have a subtle sour flavor. The easiest way to achieve this is just to make a Chocolate Cake mix with Sour Cream. Also Red Velvet isn't always bright red. There is a way to get it that way but most ones I see baked from scratch are burgundy.

If that is true I'm glad none of my red velvet cakes were sour in any way because that sounds awful. Also red velvet is only ever bright red if it's either store bought, or purposefully made with tons of coloring, it is simply a variant on a normal chocolate cake and most people don't realize that.

Butter for icing should be room temperature for proper mixing. You only want cold butter if you're making a pie crust or any pastry that's flaky. Warm butter = smooth and creamy Cold butter = flaky and crumbly Oh, and they looked a little flat because you guys used 9 inch pans instead of 8 inch ones. Don't forget that the bigger pans will spread out more because, you know, wider and such.
yes that is a more healthy alternative to red dye. but originally the red colour was caused by the cocoa reacting while baking, nowadays the processing method prevents the colour change, thus the use of red food dye is the only way to achieve the effect.

you need the carbonate to neutralize the acidity of the buttermilk.

Tbh, the main reason for the vinegar is to stabilize the food dye to stop it losing it's colour when it cooks.
