    My favorite vegetable is the potato. There are so many varieties; can be prepared in so many ways (both hot & cold); and can be stored fresh, frozen, or canned. ;-)

    My favorite vegetable was the carrots my grandfather grew on his small plot in Maine. They were small and slightly sweet. (short growing season) I'd guess you'd call them organic today because he didn't use chemicals either to fertilize them or to kill weeds and bugs.

    My favorite veggie? Oh my, there are so many! I love asparagus fixed all different ways, but creamed asparagus on toast is right up there. Corn on the cob, the fresher the better. Swiss chard steamed and served with a bacon/vinegar dressing. Fresh, raw garden peas. Tomatoes, tomatoes, TOMATOES! Brussels sprouts in butter sauce, as well as broccoli and cauliflower. Oh, John, this is like asking which of your videos are my favorites! Too many to say. :-)

    #4 I think the best way to maintain the nutrients is just to shop often so you don't have to store them often.

    rhubarb's delicious! we used to grow it on our old farm, nothing as good as fresh rhubarb pie or cake with some ice cream or whip cream on top

      At my mother's house when I was little, we had a little rhubarb... bush? I don't know what it would be considered, but my sister and I would eat some almost every day.

    My favorite vegetable is Brussels sprouts, second is cauliflower. Growing up we were desperately poor. The vegetables we had were potatoes, wild greens, beans (yes, I know they're technically not vegetables) and sweet potatoes. We might occasionally have carrots when a neighbor had a surplus, but because my kid brother loved to eat carrots, I never had the opportunity to eat any of them.

      I am also a fan of all of those things. But I do have a preference for canned corn vs. frozen, refuse to eat cooked carrots, and used to call broccoli stalks "trees" when I was little.

      +Sam Hackenson Yep, it's a grain. I had a professor who would joke that Illinois (historically mostly grassland) replaced all their grass with more grass (corn and wheat).

    Oklahoma, my home state. Where watermelons are vegetables, our biggest export are oil and country music, and our state song is both from a shitty musical and eternally trapped in 1907. ...Much like most of our politicians.

    Vegetables are the stalks and leaves while fruits are seed pods left over from flowers. My favorite vegetable is spinach, it's packed full of good stuff and Popeye likes it.

    Stewed Apples n Rubarb with Roast Pork, Peas, Pumpkin and Potatoes, my birthday dinner every year growing up unless going to a restaurant. 😊
    Tinned Asparagus is my fav.

    1 - It's also considered a veggie since it's from the same family as cucumbers and many gourds. (It's cute that people think all fruits and veggies have to be a fruit OR a veggie. It isn't that black and white).
    34 - I bet asparagus grows faster. It can grow up to ten inches a day!

    Wow- when I was a kid I would get rhubarb from the stream and eat the stem, chewing on it as I rode my bike around the neighborhood. Very often.

      Coolidge, good lord, no! Tapioca is added as a thickener, and obviously, sugar. And I personally prefer the strawberry-rhubarb pie, which adds, you guessed it, strawberries. But it contains no gelatin. And any lazy cost-saving jelly pie you've had is doing you a disservice.

    My favorite vegetable is probably spinach and i cannot eat peas because it tastes so terrible for me that it gives me spasms.     Strawberry Rhubarb pie is one of the best pies ever, if you have not tried it John, I highly recommend it. It will change your mind about rhubarb. I spoon full of sugar helps the rhubarb go down. ;)

    Another fact: 2:14
    Too much Oxalic acid can hinder the absorption of Iron and Calcium, that's why it's not recommended to eat rhubarb when also drinking milk

    Here's a question, if you cook/boil vegetables they lose some of that goodness thts good for you. My question is: Is that goodness now in the water? And if so, dont you think that water would be great to put in your garden, so all that goodness can be reused and also keeps your soil plentiful for new growing?

      Or you are genetically predisposed to not liking certain vegetables. The TAS2R38 gene determines whether or not you can taste certain bitter compounds. Many green veges and some not green taste extremely bitter to me. I have to hide them in saucy dishes. But asparagus and celery tend to overpower anything I throw at them.

      Ya I think my husband has that same issue. He uses it an excuse to really over do it on less healthy options. Like cheeseburgers haha I think that the more you eat these types of vegetables then the more your tastes will change and you will start enjoying them. Thankfully my husband def eats more veggies now than he did even a few years ago.

    John, I'm sorry you haven't had the pleasure of eating rhubarb that actually tastes good. The stuff they sell at stores often has big fat stems, tastes terrible fresh but it's good for cooking in pies. The best for eating fresh and believe me it's good, is very thin, maybe a quarter of an inch around and freshly picked. Now that is really tasty!

    Says the Wikipedia: The original meaning of the word vegetable, still used in biology, was to describe all types of plant, as in the terms "vegetable kingdom" and "vegetable matter".
    So Oklahoma CAN have the watermelon as its official vegetable given that, in the original, broader sense, EVERY PLANT is a vegetable.

      +Twitchi if that's what you mean by cooking it and adding a little seasoning for flavor, then yes. In fact, 99% of the veggies you hated as a kid taste waaaay better when you roast or sauté them with garlic instead of boiling them.
      I mean Jesus it's not like you dump a gallon of pesto on it. Just a light brushing is fine.
