@@erin227 hey Erin! The baking time will be different depending on how thin or thick you roll out the dough. Also depends if you like it soft or crispy. If you roll it to about the same thickness as the video, 5mins should do. If you like your cookies soft, they will still be really soft when coming out of the oven but will harden a little once cooled. Its always better to take it out earlier than to bake for too long, worse case scenario just pop it back in the oven for a couple more minutes 😊

Hi Jessica! No problem at all, you can do it without a mixer. For the butter+sugar+molasses+egg step, use a whisk and whisk it really well until you have a lighter color and its fluffier. Then, to incorporate the dry ingredients, use a rubber spatula but don’t over mix it! I don’t know why but my orignal batter of butter, brown sugar and molasses never whipped up like that… Did I do something wrong? I was using a thermomix which could have been why but I don’t think that should change it.

I'm in the process of trying your recipe out and I'm having problems with the measurements. I'm from Poland so I don't use the idea of cup and half a teaspoon, only if it's a family recipe made by me and not being shared. Cups and other cups may look the same but have different capacity. Same idea with spoons. Could you please give me the measurements but in grams? I tried to look up a cup of flour but I got several different results for all purpose flour - 120 grams, 150 grams. I actually tried to weigh my cup of flour (the one that I use for most of overseas recipes and holy cow it actually weighed 180 grams. And I did not pack it in, and weighed only the flour itself, not the cup as well (just to be clear). Now I'm pretty sure that my cookies won't come out as great because the dough is much more moist and flowy, even if I had it in the fridge for an hour. It because a bit hard, but not the way yours did.

Hi Janet, you could it wouldn’t change the texture of the cookie but the color definitely won’t be as dark and the flavour might not have that punch. I’d suggest using molasses if you can 😊
Yes, it will definitely have a darker color than other cookies because of the molasses and brown sugar. You do need to make sure you beat it enough though, the color should be lighter and have a fliffy consistency before you move on to the next step 😊
