How to decorate a cake with fresh flowers!

  • Hey guys!
    I am loving decorating my cakes with fresh flowers at the moment, they are so vibrant and beautiful that they give the perfect finishing touch. I particularly like using them on naked and semi naked cakes- you really don't need any further decorations!
    In this video I show you how to wire your flowers to use on your cakes, I hope it is helpful for you!

    it's ok to use any flowers from the florist?? don't the flowers have to be organic, edible (non poisonous), food grade, etc??? where do i get these flowers??? which flowers can I use or not use??

    It’s best to hold the flower and cut the stem, rather than let the flower hit the table and potentially bruising the petals. Also, pushing the flower into the cake from its top could also bruise petals. Better to gently push from the base of the flower. If there is any bruises they are less likely to be visible.

      I am a florist and never would you insert stems into the cake for obvious reasons
      The top of the cake arrangement should be in a little flat plastic container with oasis so as to insert the flowers low cut stems
      Second and third tier flowers are then wired together and sit at the sides of the cake tiers never would I push stems into a cake tape or not

    Hi, was that a 6 inch cake or a 4 inch cake? And if it was a 6 inch, does it fit in a 6x6 cake box?? I want to make a 3 layer, 6 inch cake. However I am only able to find 6x6 cake boxes. And I don’t think all 3 layers will fit in that.

      Hello, this was a 6” diameter cake, on an 8” cake board, so I would put it in an 8” box

    Oh my gosh this is not good! This is a lesson on how not to put flowers into a cake. Always use posy picks into the cake then put the taped flowers into the pick. If you place wires and floral tape into a cake you are contaminating it.!!!! I'm so shocked by the negligence that is being shown in this video. I will not be subscribing to this channel as it is not following safe food practice at all!!!

    I just watched another video where she said gypsophila isn't safe to use on cakes. I'm so confused :(

      You're right. It shouldn't be inserted in the cake or come in contact with anything that's going to be eaten.

    Thanks, that video was exactly what I was looking for. I have a baking question. My sponge cake is forming a crust on the top, but is beautifully moist. I have experimented with the time in the oven, and the amount of batter in my pan, and with the time and speed of beating the sugar (all the suggestions I have received), and yet it still forms a slight crust. I cut it off before icing so that I don't have a "crispy" layer. Please let me know what you thing

      if you are greasing your pans heavily, the butter may be frying the outsides of the cake creating very crust layer. Also try less mix in the tins. If the tins are very full, you need to cook them longer than smaller layers causing crust. Oven at lower temperature stops crust on top. Hope this helps

      You’re welcome, glad it was helpful! It is perfectly normal for a cake to form a crust, because water is evaporating and sugars recrystallise.. plus the outer layer is exposed to the heat of the oven so will brown more. I don’t tend to trim the crust unless really necessary.. however I do love to eat it- so tasty! 😋

    Love! About how early can you put a cake with fresh flowers together? Is that something that needs to be done immediately prior to party?

      Thank you! I normally do it on the day or the night before- keep your cake in the fridge overnight to prevent the flowers from wilting :-)

      i believe to secure the wire from coming off the stem? think this is common in arranging fresh flowers on sponge.

    As a Professional Cake Maker, I am shocked that anyone feels it is acceptable to put fresh flowers on a cake.
    There is a lot of confusion regarding the use of fresh flowers on Wedding Cakes so I thought I’d clarify a few points.
    First the negatives of using fresh flowers on wedding or other celebration cakes….
    Despite my job I must state that fresh flowers are not a general food product and flowers should not be eaten for the following reasons:
    EDIBLE OR TOXIC? - Firstly, and not wanting to state the obvious here, quite a few plants are actually poisonous and could cause a range of symptoms from vomiting to blistering skin around the mouth etc or worse if ingested. They have no place being attached to food items such as a cake and particularly with the boom in popularity of edible flowers on wedding cakes there is a risk that non edible flowers might be mistaken for edible when they are not. There are an increasing number of wedding cakes which are being decorated with fresh flowers and leaves that are actually poisonous. Even if they are not actually eaten there is a risk that sap or fine hair irritants from poisonous plants can leak into a cake if they come into contact with it.
    There is a fashion amongst some cake makers (but not myself) to artistically drape any flowers or foliage around cake and this has been causing big concern in the horticultural world with experts such as James Wong writing of the dangers in the Guardian.
    If it’s not edible don’t have it in contact with your cake.
    CHEMICAL CONTAMINATION - Secondly, there is the temptation to pick up flowers from a supermarket or florist or to ask your wedding florist to bring along a few extras to decorate the cake when you are getting married. Please don’t for a number of reasons. Firstly floristry flowers are absolutely not the same as edible flowers even if they are the same species. Irrespective of whether you are, or are, not planning on eating them they are still going to come into contact with the cake that you are going to put in your mouth. Flowers from a florist, supermarket or garden centres are not designed to be eaten. They are routinely sprayed with insecticides, herbicides and fungicides, none of those are regulated fit for human consumption because they are designed to maximise the shelf life of the flower - not to be eaten. More importantly, a high percentage of flowers sold in uk are imported and flown long distances many from Africa and Columbia. They are not not regulated for the pesticides they use and just as importantly they are not packaged or handled with food hygiene in mind - quite the opposite! There has been a lot of negative press in recent years about flower pickers suffering huge ill effects from coming into contact with sprayed flowers let alone the impact on the environment (but that is a whole other story
    FOOD HYGIENE - UK Environmental Health advises against garnishing your wedding cake with anything that is not an approved food product unless you can ensure that it is free from microbial, chemical or physical contamination.
    Finally, for the same reason, please make sure that your caterer or florist does not push the stems of flowers into the cake that you are going to eat. Equally, flowers stems should not touch the cake. These flower stems have recently been in water in vases or florist buckets, so again there are food hygiene problems. Hospitals have banned fresh flowers from wards partly because of the number of bacteria harboured in flower water. Just remember that your cake maker, whilst qualified in food hygiene, is not a horticulturalist and should not be expected to know about flowers. Likewise your florist, may well know about flowers but not cakes.

      @@shalontehernandez6752 If you cant make them yourself, you can purchase ready made sugar flowers, or purchase silk flowers. I specialise in sugar flowers.

    Do I need to wash the flowers before putting on the cake and does the florist tape become sticky on the wire .

      Hey, yes I would do that and also you can insert the wrapped flower stem into a straw or posy pick before place it in the cake, hope that helps

    Instead of inserting the flowers and ruining the cake, you should think about using floral wire and making a little piece. And then attaching it with a sterilized rod - kind of like a sparkler rod if that makes sense.

    Can I ask what the purpose of the wire is? Can you not just wrap the stem of the flower in the tape, and skip the wire step?

      Yes you can do that too, it’s sometimes helpful as you can bend it into different shapes depending and easily attach it to other flowers to make a bunch

      Jillian Rogers store the cake in the fridge to help prevent them wilting so quickly.. and roses are good, very resilient! 🌹

    If you buy imported roses they will have been sprayed with chemicals that are not food safe! Better to use a local flower farmer from the UK who will be able to tell you if they have used chemicals or not - same with the other flowers you've used too!

    Floral Tape isn’t food safe! It shouldn’t be put directly in a cake. Coat it first or use straws!
