    My mother, I always had a very tight bond. We used to play guitar,sing in assisted living, nursing, personal, retirement homes until she passed away in 2002. I have been married 38 years, I still miss her so much. She had a beautiful alto voice, I sang soprano. Always keep God first,stay close as family always... I've lost my mom,dad,three brothers,3 best friends. I know what you mean when you said you wish you could go back to when you were a little girl,relive it for one day.... God Bless Y'all Always, Forever....

    What a blessing to be able to hire Corie...I sometimes hire our grandkids to help around the place, washing windows, stacking firewood etc. I watched and listened to you while prepping apples for apple butter. My garden is winding down too, but it's still staying pretty warm. In the garden, I still have tomatoes for canning salsa, and pumpkins to harvest, kale, spinach, and my fall garden. The Lord has really blessed us this year with an abundance of fruits, veggies, and meat. The cellar is filling up.

    It never crossed my mind that her marriage was in trouble.
    I assumed that he probably worked off through the week and she came back to mom and dad instead of staying home through the day by herself.
    I think it's wonderful that you was able to hire her that helps you with all your work and her money wise and also she's able to learn all the old ways that's wonderful. You all have been very blessed I'm so happy for you all. 💞

    I’m nearly 77 and my oldest unmarried daughter, who lives in the cutest tiny home she designed about 100 ft from us, is hired to mow our lawns. She trims low tree branches, my bushes and rakes leaves. She assists me in other ways but I tend to my gardening and flower beds. What a help our daughters can be! Its very cool in central KY. Im preparing for winter. Ive been bringing in the largest green tomatoes but plenty still on the vine. I enjoyed y’all. Thank you.

    You all do so many things I have never done and I am 85 years old…like making cheese, vinegar and raising plants I have never tried…I have learned so much from you Tipper. Love you all as if you were part of my family.

    I miss my mom so much. There is no more canning and preserving food. She passed away a little over 2 yrs ago

    Yaaaayy for Matt getting his fried green tomatoes. Someone mentioned that there wasn't anything Tipper can't do and I tend to agree. It would be interesting to see for everything she did homemade as opposed to going out and buying it, just how much was saved. I'm sure it was a lot of $$ saved besides it being healthier and tastier as well. I'm glad Corie and Katie both can work from home. Guys, this world ISN'T getting any less crazy nor is it getting any safer. Besides, more precious memories being made.

    My grandmother made cheese like this. We loved it. My grandfather, who came to Appalachia by way of Lithuania, taught her to make it. That brings back good memories.

    I know sometimes we reminisce about the old days, but after I got married and moved out, my relationship with my mom changed for the better. It transformed into more of a friendship than parent/child situation. I was much more willing to pitch in and help rather than complain because I want my mom to be happy, and of course vice versa. It seems like that's what I see with you and Corie. It's a beautiful thing!

    Really enjoyed this video! So important not to let anything go to waste! As the youngest of 7 I have very limited memories of my mother canning, or doing things such as making cheese, but I will never forget her fabulous cooking skills and all of the things I learned in the kitchen. She was also a wonderful seamstress, helped my dad run their 40 acre produce farm and open air market, and worked at a military installation building tanks for 30 years on top of having 7 children. She lived to be 86, and worked so hard.

    Gosh I wish that I could just bring my eighty year old mom to spend one day with you tipper she loves all the kind of things you do in the garden and yard that's right up her alley as she would say I've learned so much from her but the one thing I learned that I will always carry with me is how to make something out of nothing. My brother and her both have the love of gardening like cori has with you I didn't inherit that but I love the other end of it like canning and how to preserve as much of anything that is possible...
    It's a blessing to be able to live as close to my mom as I do and help take care of her just last evening we went riding around down memory lane for her I drove at least three hours then stopped at the dairy queen and got her a strawberry sundae it was a blessed evening enjoy your children tipper as I know you do.

    I know I've stated it before, but I just want to reiterate that you and Matt should feel very proud and blessed for having raised two beautiful, (inside and out), loving, Godly, and hard-working children who've stayed true to your faith-based rearing, and are paying you back into their adulthood. There is absolutely no comparison of a child raised in clean, Christian, country living environment vs. inner city, violence-influenced, and video games as a babysitter, etc. I wouldn't trade my childhood, nor my daughter's childhood that included all of the positive aspects of the above.

    The cheese from "blinkie' milk was so interesting to watch you make. I will have to try that. I would also like to try the one ladies idea about putting in food processor and making cream cheese. It's awesome that you can hire Corie to help you and spend time together as a mom and daughter, making incredible memories.

    That cheese is also really good for Mexican or Tex-mex dishes. A little Mexican grandma who used to live next door occasionally made corn tostadas, chili slow cooked pork (until it could be shredded), and topped with that kind of cheese... really good!

    My aunt Nanny's lady friend, Edie, who lived down the road a piece, brought her some shmierkase she had made. That's Pa Dutch for cottage cheese. She milked a cow, by hand, and shared the unpasteurized milk with Nanny. A quantity of milk had curdled on her so, being a frugal first generation German American, she made shmierkase. She hung the curds in a cloth bag until fully drained and mixed in salt and some cream she skimmed off her fresh milk. It was, by a mile, the best cottage cheese I have ever eaten. I eat store-bought cottage cheese with black pepper ground on it, or apple butter or, my favorite, with maple syrup to give a some taste.

    Years ago it was common to see family members working to together, visiting, even living together without question or explanation. It was a positive occurrence and natural. Our grandchildren are over so often I've had folks joke if they have a home! Close families are now considered odd or rare. It's a treasure. My grandmother from Ohio, made green tomato pie.

    I live in the city but I am from the country. We used to raise our own food grow our own garden I would help my mom can our own vegetables. The world needs more people like you. It shows there is still hope in the world... you don't have to do all the stuff those other people do to get views. Families don't stick together like they used to

    This world needs many more Cories! She is pretty, was raised properly, has a nice husband, has a great mother teaching me to cook, and has more talent and usefulness than 90% of this country.     Tipper it's Always a blessing to have your children working side by side with you! Tipper you could tie it up(the cheese) on a wooden spoon and cross a deep pot and let the cheese hang down in the pot while it drains. This is what I do.I add chives and onion powder to mine.It's really good.My family likes it with Ritz crackers and cream crackers and some like it with a slice of fresh tomato and others with a slice of pepper.

    What a productive day you had, Tipper! It's always a pleasure to cross things off the list.
    The pH test strip can leach chemical reagent into your test sample. It's not a good idea to pour the tablespoon back into your vinegar.

    In India Paneer Cheese is made the way you made your cheese. With paneer you press it into a tray and put in fridge until firm, slice and fry to add to curries. I also use it instead of tofu in stir fries, I like it better than tofu actually.

    Hang a quart of plain Greek yogurt in cheesecloth overnight- for Lithuanian flavor add a tsp of caraway seeds and salt to taste. Put back in the yogurt container let set in fridge overnight. Has a cream cheese texture so good w cracker, sandwiches, veggies. The Lebanese version calls for Zatar- that’s yummy too! Or try Italian spices and garlic. I put on baked potatoes, as a dip for veggies- yum! Your recipe for paneer is a classic- great for so much more than Indian food!

    I watched a video today where the lady after making her cheese, added a tablespoon of cream and 2 tablespoons of butter, then placed it in her food processor. It was so smooth and creamy!

    You guys don’t need to explain yourselves. You are mother & daughter for Pete’s sake! How much time you choose to spend together is no one’s business. Some people are just so nosy & judgy! lol. This was a fun & informative video & I really enjoyed it, just as I always enjoy watching you and your family interact. My collards are looking good & I can’t believe how quickly my mixed greens have come up! I expect to be picking my first mess next week! I just love this time of year & the cooler temperatures.     Enjoyed this! We use to make cheese when I was growing up, like you did, it us very good , love it! Awesome y'all made vinegar this year ! You have great girls! I never once thought Corie did not have a happy marriage, I figured with any free time she had ,she was helping y'all there at home , it's great that she helps ya , and also gets paid. When my mom and dad were alive and I lived near them , I was always at their home, my wife and I, just her or just me. They always enjoyed it. Just because you move out, doesn't mean it isn't home. As they say "home is where your heart is" . Your heart can have have more than one home. I watch Corie and Katie's videos and see that Corie is happy , and Austin seems to be an awesome guy...appreciate y'all always ...God bless..🙏❤

    The cheese that you and Corrie made is sold in shops as " Cottage Cheese ".
    I've made it using 3/4 of a cup of vinegar to a gallon of milk then let it hang, with a bit of squeezing, over a couple of days.
    The cheese rolls out in a ball and the cloth is relatively clean.

    Idk if anyone has suggested it yet, but you can tie the cheesecloth up and hang it from a wooden spoon. You slip the handle of the spoon through the knotted cloth, then you can wedge the spoon in your cupboard where the door frame catches the spoon bowl on one side and the tip of the handle on the other. Idk if that makes sense…now that I’m trying to type it out to explain, it doesn’t seem like clear directions, lol, I could draw it for you. If it does make sense, then I guess you could figure that if you don’t have a spoon long enough to fit the opening of the cabinet doorway, you could use any old stick, even a broken yardstick

    Keep that warm cheese in cloth and press with a skillet till drained, cool and a solid piece. In India this is called paneer. You can cube or slice and actually fry. Can be added to dishes. Palak paneer is my favorite, which is a cheese and spinach dish. I've added to green beans, just fried and ate with a meal. You may like it

    My mother pays me some to be at her house. She would rather me come there, than to get another regular job. Clean some, cook for her, which is what I was doing already. Mostly just to be there, since dad passed Dec 2019. I’m happy y’all are doing the same😊

    my Mama and I used to take the last few green tomatoes from the vine and wrap them in newspaper, put them in a cool dark place (has to be cool, don't stack them, lay them out separately) then take them out one at a time and ripen on a sunny windowsill. We would always save the biggest best one for our Christmas dinner, with perfect timing and a little luck, we would be successful most years. Try it, nothing better than a real 'mater for Christmas

    A farmer friend called me today and said he was picking the last of his tomatoes and did I want a box to can? I did, of course! this will be my 3rd run of canning tomatoes so I think I'll be set for the winter and spring. Thanks for sharing the cheese making tips. I've never done it, but you've inspired me! I'm gonna try it. Seems like it would make a nice gift for neighbors this Christmas, too. Korey is a blessing and so is your Katie. My daughter lives almost 3 hours away and I sure do miss having her near. I know you treasure your time with the girls. Blessings.

    I live with my daughter Annie, her husband Luke and two grandsons Leo and Ian (6 & 8), I'm 78 and still ambulating, especially with the boys.. I do most of the cooking, and food preservation. I'd love to see how you do your fried green tomatoes ... I know how I do them, but I'd bet yours are different, and I love to see new ways of doing things. As I have reached "Geezer" status, I try to keep as active as I can. Love your videos and enjoy watching your family in action, Thank you and God Bless.

    Look around and you might find some other recipes out there for the harder cheeses I had a Great Great Grandma who made all of their cheese soft and hard ones waxed and cottage cheese also !!! They did DEER FARMING also with another part of the barn as a DEER BARN for themselves in the olden days !!!

    You have the perfect spot for it in front of your kitchen window,just put a nail or a screw into the center of the decorative scalloped edge above your sink. String the cheese up there above the sink.

    My Grandmother used to make that cheese and she did bring the top of the cheesecloth together, used a string to tie the top and hang it from a beam on the back porch. I have got to try it, now that I have seen you make it. I didn't know what was done prior to the strain part. I bet my Cowboy candy would be good atop the cheese also....wow, lots of things come to mind. Thanks as always to any and all of your posts. Way to go Corie.

    Maybe putting some landscape fabric down over the asparagus bed will let the rain go through and keep the invasive runner herb at bay for the whole winter and it won't come back as bad. Love homemade vinegar. Making apple pie today for sure. I like to put some fresh ginger and snockered dried fruit in it to make it special. Everyone asks what is in it and when they hear ginger they figure it out. Fall is the best after a hot summer. Best to you all.

    There are many ways to use acidic whey. You can add it to a savory smoothie. It can be used to brine or marinate meat. You can cook rice or pasta in whey rather than water. You can soak dried beans in whey before you cook them. Whey can be substituted for broth in soups or stews or mixed with the broth. Whey can be mixed with water in a watering can and poured on the base of garden plants, especially tomatoes which love calcium. Whey provides extra protein and minerals to plants and people. Whey can be stored in a mason jar in the refrigerator for up to 6 months. Just another way to get additional goodness out of food.

    When you said "blinky" referring to your milk, it brought back so many memories! My mother was born in Ohio, but both of her parents were born and raised in Central TN and she used many words I've heard you say. I mentioned some milk in our fridge had gone blinky the other day and my daughter said she'd never heard that word before! thanks for the reminder!

    Yes! I knew you were going to mention ricotta (in Italian pronounced Re-COAT-ah) meaning "recooked." When my family in Italy would make cheese, they would make other types of cheese first, then the remaining milk would be reheated to make ricotta.

    Sweet ladies, a pH of 3 means it is very acidic, which I would love! You can get it down to "store bought" vinegar pH which is around 5-6 by adding water. Well done! I will go back and rewatch your making vinegar video!! Love your channel!

      Pardon me, I think youre mixed around. Seven percent is cooking vinegar. Cleaning vinegar which has a warning on it not to cook with it is a pH of 27-30%. It is used to kill unwanted vegetation on contact and cleaning. Very acidic!

      The LOWER the number, the MORE acidic it is. There is no 27 or 30 on the pH scale - it goes 0-14, with 0 being the most acidic, and 14 being the most ‘base’, or alkaline, and 7 being neutral. Fun fact - the skin on your face is slightly acidic, hovering anywhere from 4.5-5.5. To keep it at it’s healthiest, try to use facial products around the same pH. Most soaps are highly alkaline - which is why they can be harsh on your skin. A diluted vinegar ‘toner’ can bring it back to a healthier, more acidic pH. Baking soda is about 9 on the pH scale, which is why deodorants made with baking soda have a tendency to be super irritating to your armpits!

    So interesting! I've never seen cheese made from sour milk. It looked crumbly like cottage cheese. I enjoy your garden adventures. Wish I could share your fried green tomatoes. Love 'em! A country woman in Azerbaijin makes cornbread, but first she has to grind the corn. Then she bakes the cornbread in an outdoor wood oven. There is no speaking but the visuals are easy to follow.     You can hang your cheese from one of your upper cabinet handles, just put a bowl on the counter under it to catch the whey. That's what I do.

    Hello Tipper - I enjoyed the busy day you & Corie had - took me back to the days of helping my mother with similar tasks - she always had a huge garden as well. For the green tomatoes - I knew of quite a few who would place their green tomatoes in a cool, dry, semi dark place and let them ripen - turning them every so often - a slower method for sure, but they did ripen - the taste might not be as if fresh from the vine, but still were good both for eating and cooking.

    I have used the legs of an upturned stool to drain. Tie the cloth- each corner to each leg. Put a bowel on the stool seat under the cloth. If this method demands that you go out and buy a stool then just pay Corrie to stand holding the cloth for 10 hours. X

    I love seeing you with both your girls! You seem to have a very loving relationship with them. I enjoy your family dynamic. My middle daughter and her husband live in our cottage, just a few paces from our back door. It made this mama’s heart very glad when they moved in there. Regarding slightly soured milk, I don’t know why you couldn’t also use it for making yogurt. I make yogurt a couple of times a week - a gallon of whole milk will yield about a quart of yogurt and if you strain it, you’ll have more than a quart of whey to use in various ways. I’ve been interested for a while in making cheeses at home so was very pleased to see your video today.

    We are getting our first frost tonight up north here. I picked everything that was big enough that it will ripen in the house kept some of the vine on the cherry tomatoes. I don't have a good window to set plants in in my house I only have one southern facing window and it's blocked by a building. Otherwise I would have brought them in. All my plants are in planters. Got a pretty good haul for fresh eating.

    Regarding the cheese. I met and bought milk off of an old farming family many years ago. I would go back and get three or 4 gallons at a time. His name was Jerry Hinman and he taught me how to make homemade cheese.
    It was similar to how you made it. After you salted it, I would add cream or half-and-half, that I had set aside before the cheese, making and stir it in. Cottage cheese was probably what it would be. It was absolutely the most amazing food I ever ate. I look forward to being able to do that again. You just reminded me of how good homemade cheese is.
    Regarding the pepper jelly, do you ever make it with fruit juice? That pepper jelly looks pink.

      @@CelebratingAppalachia next time you make cheese, give it a try. I let my milk sit until it naturally soured and then follow the same process you did. Let me know how you like it. I bought some pepper jelly years ago from a lady that made it for the farmers market and I think she used peach jelly with it. It was really good.

    you know if you have berries and are just trying to get the juice out you can do the same thing you did with the cheese. put it in cheese cloth and make it into a bundle and just hang it up and let it drip into something

    You can add the liquid from your homemade cheese to breads or even feed it to Corie and Austin's dog Olive on her dry food for a boost of nutrients for her.

    Enjoyed watching….I’ve never seen anyone make cheese before nor vinegar, that was fun to watch…I’m sure Matt appreciated the fried green tomatoes…I love tomatoes so much but not a fan of fried green tomatoes….we live on east coast of Florida at the SpaceCoast….hurricane Ian was very destructive to the southern west coast & other parts of the state…we were fortunate here on east coast with only tropical storm winds & rain…we lost power only for a few hours…today (Friday) is sunshine and cooler temperatures….I have windows open, such a nice relief from hot & humid…..I’m praying for North & South Carolina’s as Ian hits then ……have a great weekend

    Oh, I’m definitely going to make this for the Greek salad wraps we like to eat! The vinegar too! This would be great use for the discounted milk my grocery store marks down when it’s close to date. Thanks for sharing!

    Lovely! I make blintzes with what I call stove top ricotta. And apple cider vinegar with apple scraps. Any way using lemon juice compared with vinegar gives the cheese the wonderful lemony flavor. I've also used balsamic vinegar. THAT gives a great taste. THANK YOU!!!
