It really is a great little machine ... very versatile... as you may have seen I have made a few tweaks that I think Ninja should consider (selling a short nonstick rack that could go on top of the grill/griddle plate to allow better smoke circulation) but all in all very happy with it.
You absolutely can , I like to do it like that to allow the smoke to roll all the way around the meat. Your cooking temp isn't coming from the grill plate in smoker mode anyway. The cook will work just fine directly on the grill surface too.
@@JohnSmith-hf1ufI do the same. Because if he doesn't it will also burn the skin more , and stick because its on more surface area compared to the skinny grates its on. He has the right idea.

The grill grate allows smoke to flow underneath. I’ve tried both ways no discernible difference
