If you have over 20 games played on switch (as play activity only displays 20 games) does it display the 20 most recent games played or what happens with the play activity for the games after the 20 game threshold?

Yes it displays the 20 most recents games played. If you play a different game that is not in the 20 most recent games played list, it will appear in your 20 most recent game played list at the top and will removed the game that is last on the list.
