Do you cover want insurance you need as a dispatcher? Do you cover what to do if your carrier's truck breaks down or if the load was damaged via low bridge or accident? Do you explain how to deal with a load that was stolen off your carriers truck? These are all the things I am trying to figure out before hand. I'm just wondering if your courses go over these as well.

You can use DAT load board to pull those numbers. You can use DAT Trendlines for national and regional rates as well.
Can I use my pick-up truck with an enclosed trailer, or does it have to be a box truck or semi truck?
It sounds like hotshot to me! Research more hotshot market. Your pick up truck might be useful for this market and make money at the same time.
