I've had plenty of strongly aged steaks and it's hard for me to associate the flavour with blue cheese. The aroma maybe, but it's a much better eating experience than thinking of blue cheese. When you try it you'll realise that this is what beef should actually taste like!
"Funky" is used to describe the spoiled quality that is in the meat. Think of a strong bleu cheese meets an earthy mushroom and a backdrop of what I can only describe as a toasted walnut as you swallow. It's really a flavor of its own.

dry aging breaks down the fibre within the meat, in other words its mainly a tenderizeling process (it also decreases the water contents within hence increases the flavor inevitably)...the question is why would u do that to a piece of veal that is already so tender to start with? Some people like the taste of dry aging, I personally prefer fresh cut...but in a steakhouse scenario, a piece of dry aged cut will get cooked n rested hack a lot faster than a piece of fresh cut,due to its lesser water content within...but for me it's always fresh cut...

I'd love to see Nick do a video on pork - there's a few interesting videos floating around showing pork dishes being cooked and the meat is medium rare. I think Nick would have an interesting view on this.

I am similar to you, love real parm, hate blue cheese, also hate goat cheese. You might like 30-45 day aged beef, more intense flavors a purely funk, beyond that it is really funky and not even as juicy as normal steak, I don’t like it.

Because of the way veal is produced. You take a calf and you basically immobilize it by putting it in a little hut which forces it to spend the entirety of its life sitting down. By not allowing it to stand/walk/move, the muscles atrophy and you get this extremely soft meat that looks almost like a white-meat product. Veal doesn't really bother me, but at the same time, I understand why people consider this cruel and I think that these guys were completely disingenuous to imply that because their stuff is being done by a small, local farm, then it's somehow not cruel.
