  • Being a butcher may not seem like a dream job to you, but in this episode of Subculture Club, Thrash Lab visits three independent butcher shops in the San Francisco Bay Area and reveal how the job has become a whole lot hipper and more desirable than it used to be. This generation of foodies and meat lovers want to know where their meat comes from and as a bonus have a relationship with their butchers (just like the old days).     These folks are putting out a very nice, locally grown product. Their craft is also somewhat of an art form. I hope they continue to have success.

      Sadly animal agriculture is as unsustainable for the world, meat is going to be banned soon as a matter of survival by the UNO or any of that sort. Also science is on the plant based side more and more.. so unfortunatly, they won't :(

    I've been a butcher at a grocery store for a year now I love it I make good money I'm 25 years old now and hope I do it till I retire.

    I had a career change last year and decided to go into butchering... Geeking out is a massive part of it. Also just watching the old hands do their thing is amazing. I share my block with a guy who's been doing it for nearly 50 years. Every time he just hands my ass back to me. :)

    Wow! Awesome to meet the next generation of producers in these very old crafts. You should all be very proud of what you've achieved when so many other people of your age think there's nothing better to do but seek fame or fortune by being discovered! Hard work does pay!

    I love what she says from 3.50 on about likening it to a martial art form.
    I'm not just a butcher, I'm a tradesman. Just like a carpenter or a builder.
    The more of this way of thinking that these guys a talking about is what Australia needs.

    I've been a vegetarian for the past 5 years, not because I'm opposed to eating animals, but because I haven't had the opportunity to buy from farmers and butchers that are this passionate about good quality meat. I'm excited about this revival!

    yeah alot of people nowadays dont realize how much work is put into butchering, handling, and packaging these animals to get them into the grocery stores, and the skills and handling of a knife is art.

    I really miss this as a skilled craft. As a little kid going to the butcher was oddly my favorite Saturday morning chore. I loved watching Mr. Mirabella work. Even then I thought how he handled the meat and the process, carefully, slowly, meticulously, was an art form. To this day, I have never bought/eaten (of my own accord) a steak in a package. Never will.

    I'm a butcher in a small town, and I'm new within a month of working. It is speed oriented but once you learn the cuts and the machines it's easy. I don't have a part in slaughtering but I do everything else. We keep farmers, locals, and even out of towners fed with meat that is pure and healthy.

    I enjoy seeing the process of the salughter to the table. But it has to be done properly including the kill, to the way you treat your equipment and so forth.

    I remember seeing this a long time along when I was growing up in Detroit, Mi.
    My folks would take my sisters and me to the local meat market to purchase tons of beef, chicken, and pork for our business.
    Man seeing this brings back those days of bleach and blood mix with the cold temps of the market.
    That and we're the only asians in the area...

    I am allmost 59 and since some years i have become very interested in meat and butchering etc. I think the old butcher craft should indeed be revivited! and not the mass keeping of animals but good honest meat for a good price!! from animals who had a good live!! all the best to the new generation butchers!!

    I'm in my 30th year as a butcher & would give anything just to work in the shops in the film,I'd do a week for free just to experience the atmosphere & obvious respect these guys get. Not appreciated enough in England,& would love to mix our cutting culture to produce a real ocean crossing infusion of skills.

    Watching honest butcher shops and farmers that treat animals right with respect gives me a lot of hope that maybe one day we will stop treating animals so terrible. It's a good change of pace from watching all those "truth about slaughterhouses"

    This is awesome love that these are here in SF or close. Growing up here we went to a few but they had been largely fazed out by the "Safeways of the world" in the 70s, 80s, and 90s. Love that smell though, thats something you never forget. I will come soon to all of you and buy the meats. Honestly what else is their besides love laughter meat bread beer cheese wine sausage greens sports and art.

    nice heartwarming video.. preparing animals' meat for human consumption in humane way is an art for me.. hi everyone im a filipino certified Butcher presently residing in Philippines with 3 kids and being very low compensated at a AAA slaughter/fabrication house.. hoping somebody abroad could help me find a nicer salary for butcher job, willing to work abroad.. thank you in advance :)

      nope.
      but from the sound of it, you should get more sources then one or two. (entertainment especcially has lots of misinformation)
      now dont get me wrong it may be true, i havent delved into it that closely, but the overall line in here is Efficiency. it just means that the natives were efficient.
      in the olden days, not being efficient could really easily mean that youd starve or die.
      things were a lot harder.

    Did you notice the 8.95/# for ground beef?
    Good luck competing with the big box grocery stores that sells the same thing for 3.50/#.
    Local Sustainable butchery is a great thing but if the price is not competitive people won't come back.

    Funny how the fact that the person making your sandwich is wearing gloves gives people a sense of security that proper food prep and sanitation procedures are being used. At 5:48 the guy's making a sandwich on a cutting board designated for raw meat. Additionally his personal drink is sitting on the cutting board. Gotta pay attention to what people are doing- it speaks volumes about what they perhaps should have done that they didn't.

      its amazing to see my sister slice the meat to really fine pieces (umm, not thin but pretty).
      and my brother goes throuch ligaments like they arent even there.
      then i try it: "FFFFFF where did he cut again? how could she slice such a thin piece off of this steak O.O???"

    Safeway and Albertsons is the only place I could go to get ground beef without pink slime. Recently I started going to a butcher and I'll NEVER go back to that supermarket meat.

    INCORRECT FACTS! im a research scientist and a DENTIST..i will argue this FACT all day long..our stomachs ARE NOT like herbivores we are capable of digesting meat!!! strict herbivores cannot digest meat.. since when have cows or rhinos been able to digest meat? Humans are omnivores CAPABLE of eating meat and plants, thats why we have BOTH canines and molars! the reason we dont have canines like lions is because OUR ANCESTORS used TOOLS to hunt, and lions use TEETH to hunt!

    You should do a video of a butcher shop that also slaughters its own meat. Thats a sub culture and the viewer can really see the early stages of the process to the end.

    Although man is carnivorous it is by nature and for cause, if you work at an physically demanding job like lumber jack the necessity for tons of calories via meat makes lots of sense, however if your lifestyle is more cosmopolitan, then meat is more for taste than sustainability
    Meat simply isn't necessary for human development. A balanced diet means nutrients, not necessarily specific food types (meat).
    Exercise is a must regardless of what you eat, cows are fat vegans who don't exercise

      Well they aren't buying a whole cow, you're buying a "side of beef" which is half a cow cleaned, set and prepared. It would make no sense to saying that you're buying a cow. Not to mention it might be a male bovine...

      The ignorance of vegans never ceases to amaze me. Talk about mind altering euphemisms, why not just call yourselves "Ignorant, annoying, soapbox climbing haters of everyone who eats innocent animals because they don't agree with my narrow minded, uninformed lifestyle choice" instead of "vegan" (I admit it's a bit of a mouthful, but a lot less euphemistic).
