    Recipe Ingredients:
    450-gram firm tofu - cut into cubes/ coat with cornstarch
    1 medium carrot (1/2 cup)
    1 cup broccoli (1 cup)
    1/2 yellow bell pepper
    1/2 red bell pepper
    1 medium onion
    4 cloves garlic
    4-5 tbsp oil for frying the tofu
    2 tbsp dark soy sauce
    1 tbsp date syrup or honey
    1 cup of water/vegetable broth
    salt
    pepper
    Sauce:
    3/4 cup water
    2 tsp arrowroot or cornstarch
    Note: For the non-vegan option, you can add oyster sauce
    Instructions:
    Prepare the Tofu:
    Press the tofu to remove excess moisture.
    Cut it into cubes and toss in cornstarch to coat evenly. This will give it a crispy texture when frying.
    Make the Sauce:
    In a small bowl, combine the ¾ cup of water with 2 tsp arrowroot or cornstarch. Stir until smooth.
    Fry the Tofu:
    Heat about 4-5 tbsp of oil in a pan over medium-high heat.
    Fry the tofu cubes until golden brown and crispy on all sides. Once done, remove from the pan and set aside.
    Stir-fry the Veggies:
    In the same pan, sauté the onion and garlic until fragrant, about 2 minutes.
    Add the carrot and cook for 2 minutes. Add the broccoli, and 1/2 cup vegetable stock, and cook for another 2 minutes. Stir in crispy tofu and bell pepper and season with soy sauce, cook for about 2 minutes until the veggies are tender but still crisp. Season with a pinch of salt and pepper.
    Pour sauce, date syrup, and 1/2 cup of vegetable stocks (if you feel you need extra liquid) into the pan with the veggies and bring it to a gentle simmer. The sauce should thicken as it heats.
    Taste and adjust the seasoning with more salt, pepper, or soy sauce if needed.
