Reminds me of the later PES titles on the PS2 where they often had faces that were just sitting there unused on the preset tab like a bunch of German players, most of the Dutch national team and some of the 2002 Brazilian national team.
EA clearly did this to save time. To scan player's faces and put it in the game took time and resources and basically almost nobody uses second tier team so maybe they just simply use Cantona's face to these players.
This can't be intentional. Why wouldn't they just use one of the many generic faces that are present in the game? And was it even legal to use Cantona's likeness to portray different players?
Watching this gameplay reminds me of how bad fifa players on pc had it back in the day, since World Cup 2006 until Fifa 10 the pc ports were just the ps2 versions, even Fifa 10 was just the ps2 version but with better resolution and lighting efects, while the 7th generation ports had the better presentation, graphics and gameplay
FIFA 14 was the last to release for PlayStation 2. With it, there was a FIFA 14 for PS2, PS3, PS4, PSP and PSVita. One of the reasons I love old FIFA's, aside from the gameplay, are the soundtracks. Such awesome songs and vibes I get when I play them. Keep these videos coming!

It was probably a slip. EA fucked up things back in the day too, FC Thun having a single kit in one game comes to mind.
