Chef M-thank you for this vid. What a wonderful starter for my guests this was!! I dislike squash soup, but your vid actually made me want to try it. One would think it is overly sweet, but no! It turned out balanced with savoury, sour & sweet, with a gentle umami. Then the textures of roasted seeds, boiled & fried pumpkin…amazing! The pouring of the soup onto the plating was different. But it gave time for my guests to see the plating and taste bits- prior to pour. It was awesome. I did have one plating remark from a comedian guest at the table (who enjoyed the food). It was how he viewed one small aspect of the plating…specifically the brushing of the date/balsamic sauce against the white bowl. But I’ll email that if I remember. Other than that - delicious starter and many thanks🏅

I like to drizzle a few drops of pumpkin seed oil on the soup. It has an amazing color that changes between redish-brown and green. The flavour is very nutty.

I had to add more viniger to get that sweet n sour taste to the dates it that the way it is supposed to taste is it is it supposed to be a little bit spicy .
There is vinegar inside a puree and my oranges was quite sour so it was ok. If you got very sweet oranges I would use some lemon juice inside a soup as well. But overal this soup supposed to be more sweeter...but if you dont like it just adjust recipe for you ;)
uhmm...I cant imagine the orange juice and vanilla. Im no chef at all, but as an alternative, I'm thinking carrot juice and cumin seeds. Perhaps feta crumbs to replace the orange segments in presentation?
It is a pumpkin soup but in America this is not a pumpkin looks more like acorn squash;however, if this is a different kind of pumpkin then I taught me something new and thank you.
Overall great but I'm not sure about having the soup in a jug washing away the whole presentation in the bowl when you pour it, looks a bit unrefined. Also can I just ask why you haven't roasted the squash for more flavour? are you worried about the colour?
Ok how you wanna eat soup without putting it on the plate? Probably I just did not want to do it at that time. Maybe next time I will do it. It is not a big deal to me.
@@ChefMajk yeah they often come in a jug but then when you pour them into the bowl they don’t drown the rest of the components, it should still look like a nicely presented dish after the soup is added, rather than a bowl of custard with a couple of coloured things hidden underneath
I love the Michelin star recipes. They give you nothing on the plate leaving you still hungry and charge you a fortune. Then you have to go through the Drive Thru at McDonalds on your way home. SUBSCRIBED 😂😂

Yes, that is alright, always adjust a taste how you like it. And yes I agree the puree should be sweet and sour so depend on the taste of your juice.

Maybe I am just an ignoramus to fine cooking - but what is the point of plating - and then cover most of it with soup?
You see the plating on the table and then they put the soup in next to you. There is no other way to do it
