I dont think Id catch everything that was said to write it down and when you need to be focusing outside how can you take all that time writing things. Also if you get one piece of information wrong it can create a lot of problems.
It is ATIS so you can listen to it however long you want, but you are 100% correct. These yolo methods just create more problems then they solve. And if he is talking like this as ATC don't be afraid to tell him : Speak slower. And if he has too much work perhaps he should talk to his superior about splitting the frequency. Not dangerously offload his problems onto other by speaking unintelligibly.

Why is ATC reading the ATIS so fast, there is no requirement for that and is really unprofessional
Unfortunately, we can’t do anything bad. You just have to accept it the way it is. You’ll get faster with practice.
