Francesco Spaggiari, sommelier of Rimessa Roscioli talks to us about the Cesanese Pallò produced by Falcone winery, located in Piglio, in southern Lazio. Cesanese is a grape variety with very ancient origins, probably coming from the Middle East. In the Middle Ages, thanks to a monk, it landed in southern Lazio thanks to the presence of the Benedictine monastery of Subiaco. The peculiarity of Pallò is that it is vinified in underground amphorae which give it unique organoleptic characteristics and very elegant spiciness. This label is produced in collaboration with the winemaker and is an exclusive of the Roscioli Wine Club
