    No wonder why Japan has reach its global stage as one of the best country, simply because they are so diciplined, respectfull, smart and very much clean people... only in my dreams maybe could i even go there....

    As a line cook, living in Northern California, I found this program informative and fascinating. Even if I had eaten some of these things before, like pickled plums, watching it paired with slow cooked pork, sounds delicious. I learned a lot more about how these preserved foods are enjoyed! Thank you!

    Where did Japan get all its salt in historic times. It would take a ton of energy to produce this much salt.

      By pooling sea water and letting it evaporate. Japanese summer's are very hot which also helps accelerate the process.
